I love a warm, hearty, filling salad and this simple wheat berry fig Brussels sprouts salad just makes my taste buds and body feel SO good! It is great as a main dish or an appetizer. I love Fall and the produce that comes with it! This warm salad is perfect for easy meal prep or Thanksgiving! I used wheat berries as my whole grain in this salad, specifically Jovial Foods organic einkorn wheat berries. I love the quality of their products (this is not an ad!) and highly recommend you checking it out! You can definitely use farro in place of the wheat berries if you can’t find them in your grocery stores. They are very similar in taste and texture. This wheat berry fig brussels sprouts salad is so easy to make and very nutritious, as it is high in fiber, protein, and healthy fats. The figs add a sweet element to the salad and almonds add a great crunch. It is simple, delicious, and perfect for Fall!

Simple Wheat Berry Fig Brussels Sprouts Salad (vegan)

Ingredients

  • 2 1/2 cups cooked wheat berries or farro
  • 1/2 cup sliced almonds
  • 1 cup chopped dried turkish figs
  • 1 lb Brussels sprouts, cleaned and sliced in half
  • 1/2 red onion, sliced or largely diced
  • 1/4 cup extra virigin olive oil
  • 1/4 cup orange juice
  • 1 tbsp balsamic vinegar
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • a couple twists of fresh cracked black pepper, or to taste
  • 1 tsp dijon mustard
  • 1 tsp pure maple syrup (or honey if not vegan)

Instructions

  • Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper or a silpat mat. Spread Brussels sprouts and onion on the baking sheet and spray with avocado oil (or whatever oil you desire). Salt and pepper liberally. I also sprinkled on some garlic powder too, but that’s optional. Roast for 35 minutes.
  • To make the wheat berry salad, make the dressing in a large bowl by combining the olive oil, orange juice, balsamic vinegar, garlic, salt, black pepper, dijon mustard, and maple syrup. Whisk until well combined. Add the cooked wheat berries or farro, sliced almonds, dried figs, and roasted Brussels sprouts and onions. Stir with a spatula until well combined. Taste and adjust flavors to your liking by adding more salt, pepper, maple syrup, or balsamic vinegar.
  • Serve and enjoy! I love to eat it warm, but it can be eaten cold too.
