Gingerbread Granola (vegan, gluten-free, refined sugar free)

I can’t believe Christmas is right around the corner and I still have a million things to do. I just barely started wrapping gifts yesterday…I know, I’m so behind, but at least most are wrapped now and under the tree. I wanted to share this quick and easy gingerbread granola before Christmas so you guys can make it for Christmas morning. It’s seriously so good and if you know me, you know I LOVE homemade granola. It’s one of those comfort foods for me.

This gingerbread granola has all the Christmasy flavors and is delicious with some almond milk, oatmeal, yogurt, or sprinkled on top of some fruit with nut butter. YUM. I can snack on granola anytime of day. It has healthy fats, fiber, and protein, which makes it a winning breakfast. Also, who says you can only eat gingerbread foods during Christmas time? This is totally okay to make year round people! No need to wait until it’s December to make this! It’s addicting and so satisfying.

Gingerbread Granola (vegan, gluten-free)

This gingerbread granola is festive, cozy, and full of spice. It makes for the perfect healthy and yummy Christmas gift too!

Ingredients

  • 2 1/2 cups rolled oats
  • 1 cup chopped raw nuts/seeds (I did half almond half walnuts)
  • 1/4 tsp sea salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • dash of ground nutmeg
  • 1/4 cup melted coconut oil
  • 3 tbsp pure maple syrup
  • 2 tbsp molasses (I used blackstrap)
  • 1/2 tsp vanilla extract

Instructions

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone mat.
  • In a large bowl, add the oats, nuts, salt, cinnamon, ginger, and nutmeg. Stir with a spatula until combined. Then add the melted coconut oil, maple syrup, molasses, and vanilla. Stir until well combined.
  • Spread granola evenly on the lined baking sheet and press it flat with the back of the spatula. Bake for 10 minutes. Remove from oven and gently flip/stir granola and press it flat again. Bake for an additional 10-13 minutes or until golden. It will crisp up even more as it cools.
  • Let it cool completely before breaking it up into pieces. Enjoy! Store in an airtight container.
