Easy Cranberry Orange Cookies (vegan)

One of my favorite Christmas flavor combos is cranberry and orange. These super easy cranberry orange cookies are refreshing, soft, chewy, and so tasty! They only take a few minutes to whip up and the fresh orange flavor from the zest and juice really makes this cookie shine. The orange glaze is absolutely necessary because it is heavenly! I used my favorite Cara Cara orange to make these cookies and I could not stop eating them! They might be one of my top Christmas cookies to make! The brightness from the citrus paired with the sweet dried cranberries is my favorite! It’s truly one of the best holiday cookies!

Easy Cranberry Orange Cookies (vegan)

Ingredients

  • 1 flax egg (1 Tbsp ground flaxseed + 3 Tbsp water)
  • 1/4 cup melted vegan butter
  • 1/4 cup organic cane sugar
  • 1/4 cup brown sugar
  • 1/2 tsp vanilla extract
  • 1 tbsp orange zest
  • 1 cup + 3 Tbsp all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3-1/2 cup dried cranberries, plus more for topping

Orange Glaze

  • 1/3 cup powdered sugar
  • 1/2 tsp orange zest
  • 1-2 tsp fresh orange juice (I used a Cara Cara orange)

Instructions

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone mat.
  • In a medium bowl, make the flax egg by combining the ground flaxseed and water. Stir and set aside for 5 minutes to thicken.
  • In a large bowl, add the flour, baking soda, and salt. Whisk until well combined.
  • In the bowl with the flax egg, add the melted vegan butter, sugar, brown sugar, vanilla, and orange zest. Whisk until well combined.
  • Add the wet to the dry. Stir with a spatula until just combined. Careful not to overmix! Fold in the dried cranberries. Using a cookie scoop (mine is 1.5 tablespoons), drop dough onto baking sheet. Bake for 8-10 minutes. Let it cool on the cookie sheet for 10 minutes, then transfer to a wire rack to cool completely.
  • Once cooled, make the glaze by combining the powdered sugar, orange zest, and orange juice in a small bowl. Stir until smooth. Drizzle on top of cookies. Let it stand for a few minutes so the glaze can set. Enjoy!
