Mom’s Pine Nut Tofu (vegan, gluten-free)
My mom’s pine nut tofu is a dish that she makes on the regular and all the kids and grandkids love it. We always ask her to make it for us whenever she visits and it’s something that reminds me of home. It’s savory, flavorful, and the pine nuts add the perfect amount of crunch. Pair it with some rice and you got yourself a delicious and nutrient packed meal!
When I asked her how to make her pine nut tofu, I was surprised to find out how easy it was! You can literally make this dish in less than 10 minutes from start to finish. Maybe even faster when you get good at it! Also, it only takes a few pantry staples and no crazy ingredients. I love a good and easy meal that takes little effort for those busy nights. Mom’s Pine Nut Tofu (vegan, gluten-free)
Ingredients
- 1 box (16 oz) soft tofu, diced into 1 inch cubes
- 1 tbsp avocado oil (or any oil)
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- vegetarian oyster sauce (also called mushroom stir fry sauce)
- 1 tsp pure organic cane sugar
- 1 tsp sesame oil
- 1/2 tsp mushroom seasoning powder
- 1 tsp cornstarch
- 2 tbsp water
- green onion, sliced for garnish
- 3-4 tbsp pine nuts, toasted
Instructions
- Make the sauce in a small bowl by adding the soy sauce, vegetarian oyster sauce, sugar, sesame oil, mushroom seasoning powder, cornstarch, and water. Stir until combined.
- In a large skillet on medium high heat, add the avocado oil. Add the garlic and saute for 30 seconds. Then add the tofu and gently saute for 2-3 minutes. Add the sauce and stir gently. Cook for 2 more minutes until sauce thickens.
- Remove from heat and add green onions, pepper, and sprinkle toasted pine nuts on top. Serve with white or brown rice. Enjoy!
