Yes! Another pear recipe, and yes it is similar to the pear muffins. BUT it’s not the same. They taste totally different (for realz!) and it’s nice to have different recipes to choose from, because sometimes you have different ingredients on hand. Cinnamon Pear Bread

Ingredients

  • 1 egg replacement (1 Tbsp flaxseed mixed with 3 Tbsp water, let it sit for 5 min)
  • 1/4 cup sugar
  • 1/2 cup vegan butter, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup vegan buttermilk (1 Tbsp vinegar mixed with almond milk, let it sit for 10 min)
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 3 ripe pears cut into chunks

Crumb Topping (optional, but delicious and highly recommended)

  • 1/2 cup powdered sugar
  • 1/2 cup flour
  • 4 tbsp vegan butter melted
  • 1/2 tsp cinnamon
  • pinch of salt

Instructions

  • Preheat oven to 350
  • Grease a loaf pan (or mini loaf pan!). I like to use coconut oil to grease my pans.
  • In large bowl with mixer, cream together the flax egg, sugar, and vanilla until combined.
  • Add butter and beat until smooth. Add vegan buttermilk and beat until just combined.
  • In separate bowl, mix flour, salt, baking soda, baking powder, and cinnamon. Slowly add dry ingredients to wet ingredients until just combined (don’t overmix), mix in pears. Pour into prepared pans so that pan is about 2/3rds full.
  • To make crumb topping, combine all ingredients and use your hands to crumble on top of bread batter.
  • Bake 45-50 minutes until a toothpick inserted comes out clean. Bake 25-30 minutes for mini loaves.
