Cashew Cookie Lactation Energy Bites (vegan, gluten-free, oil-free)

These cashew cookie lactation energy bites have been on repeat over here because this momma needs it! I’ve struggled with my milk supply and these energy bites have been the perfect nourishing snack to pop in my mouth throughout the day. I eat about 2-3 a day and they also taste so yummy!

They taste like the cashew cookie Larabars, but with added nutrients that are great for nursing mommas and anyone really! It’s packed with oats, ground flaxseed, nuts, and Brewer’s yeast to help with milk production. Brewer’s yeast is a nutritional supplement and considered a galactagogue, which is anything that promotes breast milk production. It’s high in B-complex vitamins, selenium, and protein.

These little cashew cookie lactation energy bites are packed with good for you ingredients, even if you aren’t nursing. They are a tasty treat to have on hand and perfect for a nourishing snack that will fuel your body. If you don’t have Brewer’s yeast or don’t want to use it, you can totally leave it out too. These lactation bites are so easy to make and only require a few ingredients! They are also vegan, gluten-free, oil-free, and have no added sugars.

Cashew Cookie Lactation Energy Bites (vegan, gluten-free, oil-free)

Ingredients

  • 12 Medjool dates, pitted (soak in warm water for 10 minutes if your dates are dry)
  • 1 cup rolled oats
  • 1/4 cup ground flaxseed
  • 1/2 cup cashews
  • 4 tbsp Brewer’s yeast, or adjust according to your taste buds (make sure it’s the debittered kind)
  • 1/4 cup cashew butter
  • 1/4 cup water

Instructions

  • Place all the ingredients, except the water, into a food processor. Process until everything is broken down into little pieces and combined. It will look crumbly.
  • Add the water and process until the dough is sticky when you pinch it together in-between your fingers. If it is still too dry, add a little bit of water, 1 tsp at a time, and pulse until you get the right consistency.
  • Roll into balls. I used a cookie scoop that was 1.5 Tbsp. Place on a plate and put it in the freezer for at least an hour before putting it in an airtight container. Store in the freezer. Enjoy!
