Copycat Chipotle Sofritas (vegan, gluten-free)

This easy copycat Chipotle sofritas is just like the restaurant’s, healthy, and full of flavor. It has the perfect amount of spice and would be delicious in burrito bowls, burritos, tacos, or salads. Making takeout at home never seemed easier and will save you a few bucks as well!

If you’ve never had Chipotle’s sofritas, it is made of small pieces of tofu in a chipotle pepper sauce. It is actually really simple to make at home and way healthier than eating out. You only need a handful of ingredients that are easy to find and you are on your way to making your own sofritas!

You first need to press the tofu for about 20-30 minutes. This helps get out all the extra moisture from the tofu so it can brown easily on the stove and absorb all the flavor from the sauce. To make the sauce, you just add everything to the blender and blend until smooth. It really is that easy!

I paired the sofritas with some rice, black beans, my copycat Chipotle corn salsa, sautéed veggies, avocado, and tomatoes. This burrito bowl literally tasted like it was made by Chipotle. It was so tasty and the best part was, it makes enough for leftovers!

Copycat Chipotle Sofritas (vegan, gluten-free)

This copycat chipotle sofritas is easy to make, tastes just like the restaurant's, and is full of flavor. It's perfect in burritos or tacos!

Ingredients

  • 1 16 oz block extra firm tofu
  • 1 tbsp olive oil
  • 1/2 small red or sweet onion, diced
  • 1/2 cup vegetable broth
  • 2 chipotle peppers in adobo sauce from the can
  • 1-2 tbsp chipotle adobo sauce from the can (depends on your spice level)
  • 2 1/2 tbsp tomato paste
  • 1 tbsp pure maple syrup
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1 tbsp apple cider vinegar
  • 4 cloves garlic

Instructions

  • Press tofu for 20-30 minutes.
  • Make the sauce by adding all the ingredients except for tofu, oil, and onions into the blender. Blend until smooth.
  • Heat a large skillet with oil on medium high heat. Add the onions and break tofu into pieces with your hands into the pan. Spread it into an even layer across the pan and let it sit for 2 minutes without stirring so it can start to brown. Stir every 2-3 minutes. If it is burning, turn heat down to medium. You want to get the tofu to a nice golden brown color. This took me about 10 minutes.
  • After tofu is browned, add the sofritas sauce. Stir until everything is combined well. Saute for about 2-3 more minutes. Taste and adjust seasonings if needed.
  • Serve in burritos, burrito bowls, salads, tacos, etc. Enjoy!
