Easy Vegan Chex Mix
Taking a little break from all the sweets right now and sharing this addicting easy vegan chex mix! I know during the holidays you are probably expecting a sweet chex mix but sometimes I still crave savory! This vegan chex mix is way healthier than your store bought kind and it’s so EASY to make. You can use whatever mix-ins you want too. If you are gluten-free, make sure to use gluten-free pretzels or mix-ins.
The flavors are incredible and you literally cannot stop eating it! My son and his twin cousins were over when I was making this and they loved helping me take some photos. The pretzels were their favorite. Before you know it, half the bowl is gone. I took the shortcut way and made this in the microwave, but you can definitely make it in the oven too. It just takes a little more patience. 🙂
Easy Vegan Chex Mix
Ingredients
Chex Mix
- 4 cups Chex cereal (I used rice Chex)
- 2 cups plain Cheerios
- 1 cup pretzel sticks
- 1 cup sesame sticks (got mine at Trader Joes)
- 1/2 cup peanuts
- 1/2 cup cashews
- 1/2 cup almonds
Seasoning Sauce
- 1/4 cup vegan butter, melted
- 1 tbsp nutritional yeast
- 1 tbsp apple cider vinegar
- 1 tbsp soy sauce
- 1 1/2 tsp brown sugar
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp seasoning salt (I used Lawry’s)
- 1/4 tsp smoked paprika
Instructions
- In a very large, microwave safe bowl, add the Chex mix ingredients. Stir until everything is combined.
- In a small bowl, add all the seasoning sauce ingredients. Stir until combined.
- Pour sauce over the Chex mix. Using a spatula, stir until everything is evenly coated and combined.
- Microwave for 6 minutes, stopping and stirring every two minutes. Pour onto a baking sheet lined with paper towels and let it cool completely. It will crisp up more as it cools. Alternatively, you can bake the Chex mix at 250 degrees F for 60 minutes, stirring every 15 minutes until lightly browned or crisp. Once cooled, enjoy! Store leftovers in an airtight container.
