Easy Vegan Sourdough Waffles

Got some sourdough discard? Make some delicious, crispy, light, and fluffy sourdough waffles! Apparently sourdough waffles are not supposed to be “sour”. The baking soda alkalizes with the acidity of the sourdough and therefore makes it not as sour. The texture of these waffles are perfect and it makes for great leftovers or meal prep. Just pop them back in the toaster to reheat. These easy vegan sourdough waffles are fast to whip up and we loved eating them with a cinnamon apple compote. It’s the most tasty waffle and the apple compote just screams Fall.

Easy Vegan Sourdough Waffles

These easy vegan sourdough waffles are the best way to use up that sourdough discard! They are light, crispy, fluffy, and so delicious!

Easy Vegan Sourdough Waffles

Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 tbsp organic cane sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2/3 cup sourdough discard
  • 2 1/2 tbsp melted vegan butter (or coconut oil)
  • 1 1/2 flax eggs (1 1/2 Tbsp ground flaxseed + 5 Tbsp water)
  • 2/3 cup unsweetened almond milk (or any non-dairy milk)
  • 1 1/2 tsp apple cider vinegar
  • 1/2 tsp vanilla extract

Instructions

  • In a small bowl, make the flax eggs by combining the ground flaxseed and water. Stir and set aside for 10 minutes to thicken. In a liquid measuring cup, add the almond milk and apple cider vinegar. Stir and set aside for 10 minutes to curdle (vegan buttermilk).
  • Preheat the oven to 200 degrees F. Place a wire rack on a baking sheet. This is so you can keep the waffles warm while cooking the others. Preheat waffle iron.
  • In a large bowl, add the flour, sugar, baking powder, baking soda, and salt. Whisk until well combined.
  • In a medium bowl, add the melted butter, sourdough discard, flax eggs, almond milk mixture, and vanilla. Whisk until well combined.
  • Add the wet to the dry. Whisk until combined, your batter will be thick. Once waffle iron is hot, spray with oil or grease and cook waffle batter according to waffle iron’s instructions or until golden brown and crisp. Remove and set on the wire rack. Place the baking sheet with the wire rack and finished waffles in the oven to keep warm and crisp while you cook the rest of the batter.
  • Serve warm with fruit, nut butter, maple syrup, or whatever toppings you like! Enjoy!
