Fudgy Peanut Butter Chocolate Chip Brownies

You can never go wrong with brownies. If I see one on the dessert table, I’ll most likely grab one. I wanted to find a brownie that wasn’t overly sweet, vegan, and flourless. When I found this recipe and tested it, I was in heaven! I used dark cocoa powder so that’s why they look so dark. Also, there is peanut butter in this recipe, which makes it even better! These brownies are gooey, fudgy, chocolatey, peanut buttery, soft, flourless, vegan, and guilt-free! Now that’s my kind of brownie. This is definitely a kid-tested and approved recipe!

Fudgy Peanut Butter Chocolate Chip Brownies

Ingredients

  • 1/2 cup all natural peanut butter
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla
  • 1/2 cup all natural unsweetened applesauce
  • 1/2 cup unsweetened cocoa powder (I used dark)
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup mini dark, dairy-free chocolate chips, plus 2 tablespoons for sprinkling on top

Instructions

  • Preheat oven to 350 degrees F. Spray 8×8 inch pan with nonstick cooking spray or line with parchment paper.
  • In a large bowl of electric mixer or food processor, cream together peanut butter, maple syrup, vanilla, and applesauce until smooth. Add cocoa powder, baking soda, and salt; mix again until smooth. Gently fold 1/4 cup of chocolate chips into batter. Pour batter into prepared baking pan and smooth top. Sprinkle remaining 2 tablespoons of chocolate chips over the top.
  • Bake for 18-22 minutes or until top is just set. It’s okay if they look a little underdone; we want these to be fudgy! Plus they are vegan so you don’t need to worry about them cooking all the way through. Cool on wire rack as long as you can. Cut into 12 delicious squares!
