This healthy black sesame swirl vanilla cake is fluffy, moist, perfectly sweet, and nutty. The vanilla cake is so flavorful and just a really good basic vanilla cake. When you swirl in the black sesame, it makes for the most delicious flavor. The nuttiness from the black sesame balances the sweetness from the cake. I’m obsessed with anything black sesame and love desserts with black sesame so this cake is one of my favorites. It’s super easy to make too. I used coconut sugar in this cake to keep it refined sugar free so that is why the cake is a darker color. You can definitely use organic cane sugar and that will result in a lighter looking cake. You can find the black sesame paste in most Asian grocery stores. I hope you give this cake a try! It’s a healthier cake that will satisfy your sweet cravings.

Healthy Black Sesame Swirl Vanilla Cake (vegan, oil-free, refined sugar free)

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup coconut sugar (or organic cane sugar)
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup + 2 Tbsp unsweetened almond milk (or any non-dairy milk)
  • 1/3 cup + 1 Tbsp unsweetened coconut yogurt
  • 1/4 cup cashew butter
  • 1 tsp apple cider vinegar
  • 2 tsp vanilla extract

Black Sesame Swirl

  • 2 tbsp black sesame paste
  • 1 tsp coconut sugar

Instructions

  • Preheat oven to 350 degrees F. Grease or line an 8×8 pan.
  • In a large bowl, add the flour, sugar, baking powder, baking soda, and salt. Whisk until well combined.
  • In a medium bowl, add the almond milk, yogurt, cashew butter, apple cider vinegar, and vanilla. Whisk until well combined.
  • Add wet to the dry. Stir with a spatula until just combined, careful not to overmix. Pour batter into pan. In a small bowl, stir the black sesame paste and coconut sugar together. Add little dollops on top of the batter and lightly swirl with a knife.
  • Bake for 35-45 minutes or until a toothpick inserted comes out clean. Let it cool completely before cutting. Enjoy!
