Healthy Edamame Crunch Salad with Tahini Miso Dressing (vegan, gluten-free, oil-free)

This healthy edamame crunch salad is packed with good for you veggies and edamame that will keep you fueled. The crunchy veggies paired with the delicious tahini miso dressing is so dang good. It’s vegan, gluten-free, and oil-free and makes for the perfect healthy salad.

I love all the crunchy veggies that are in this salad. You got the cabbage, corn, edamame, kale, carrots, and almonds that all give a wonderful texture. The cilantro and green onions add some extra flavor. I used fresh corn from the cob so it isn’t soggy. Feel free to switch out some of the vegetables for your favorite ones. If you don’t like almonds, you could add peanuts, cashews, or even pumpkin seeds.

The tahini miso dressing is super easy to make and so flavorful. There is no oil in the dressing and you can’t even tell. It is so savory and makes this salad so yummy. This healthy edamame crunch salad is far from boring and way better than takeout. It is packed with fiber, protein, and healthy fats to keep you nourished.

Healthy Edamame Crunch Salad with Tahini Miso Dressing (vegan, gluten-free, oil-free)

This healthy edamame crunch salad is packed with crunchy veggies and a yummy tahini miso dressing. It's easy to make and so delicious!

Ingredients

Salad

  • 2 cups frozen shelled edamame, defrosted
  • 1 1/2 cup shredded purple cabbage
  • 1 cup fresh corn
  • 1/2 cup slivered almonds
  • 2 heaping cups shredded kale
  • 2 carrots, shredded
  • 1/4 cup cilantro, chopped
  • 1/4 cup green onion, sliced

Dressing

  • 1/4 cup tahini
  • 2 tbsp soy sauce (use Tamari if GF)
  • 1 tbsp rice wine vinegar
  • 1 tbsp pure maple syrup
  • 1/2 lime, juiced
  • 1/2 tsp ground ginger
  • 1/4 tsp garlic powder
  • 1 tbsp miso paste
  • 2 tbsp warm water

Instructions

  • In a large bowl, add all salad ingredients.
  • In a small bowl, add all the dressing ingredients. Whisk until well combined and smooth. Make sure there are no clumps of miso.
  • Pour dressing over the salad and toss to combine. Serve and enjoy! Best when eaten fresh.
