Lemon Cashew Granola (vegan, gluten-free, refined sugar free)

This lemon cashew granola is so addicting, delicious, and full of lemon flavor. I’m obsessed with homemade granola and this lemon granola is amazing. It’s perfect for spring and summer and adds such a brightness to your morning.

You’ll want to make like a triple batch of this granola because you won’t be able to stop eating it. Filled with wholesome ingredients like oats, cashews, and different kinds of seeds, it will fill you up and nourish your body. Feel free to use whatever nuts and seeds you have on hand. This recipe is very forgiving.

However, I highly recommend you use cashew butter because it has more of a neutral taste and lets the lemon shine. I used my favorite cashew butter by Georgia Grinders in this recipe and it was so dang delicious. The texture and taste of their nut butters is perfection!

I love making my own granola because the store bought kinds are usually filled with lots of sugar and oils. This lemon cashew granola is not only healthy, but insanely tasty and so easy to make. Eat this granola for breakfast, as a snack, or for dessert. It’s sure to make your tummy happy.

Lemon Cashew Granola (vegan, gluten-free, refined sugar free)

This lemon cashew granola is so delicious and nourishing. The lemon flavor is incredible and adds the perfect brightness to your morning.

Ingredients

  • 3 cups rolled oats
  • 1/2 cup raw cashews
  • 1/4 cup raw pumpkin seeds
  • 1/4 cup hemp seeds
  • 2 tbsp ground flaxseed
  • 1/4 tsp sea salt
  • 1/3 cup Georgia Grinders cashew butter
  • 1/3 cup pure maple syrup
  • 2 tbsp olive oil or melted coconut oil
  • lemons zested
  • juice from one lemon (about 3 Tbsp)

Instructions

  • Preheat oven to 350 degrees F. Line a baking sheet with a silicone mat or parchment paper.
  • In a large bowl, add the oats, cashews, pumpkin seeds, hemp seeds, ground flaxseed, and salt. Stir with a spatula until well combined.
  • In a medium bowl, add the cashew butter, maple syrup, olive or coconut oil, lemon zest, and lemon juice. Stir until well combined.
  • Add liquid ingredients to the oat mixture. Stir until everything is evenly coated and well combined. Spread onto a baking sheet and pack granola down into an even layer.
  • Bake for 25 minutes until golden. Let it cool completely on the pan. It will continue to crisp up as it cools. Break up the clusters and enjoy! Store in an airtight container for 3 weeks.
