This is the best classic/simple vegan cornbread recipe! It’s insanely fluffy, light, and perfectly sweet. It only takes about 10 minutes to whip up and uses ingredients that you probably already have in your kitchen. It tastes great with a smear of butter and maple syrup (or honey if not vegan) or with your favorite chili. I’ll be sharing my go-to hearty vegetarian chili next so you can make this cornbread to eat with it! If you would like a sweeter cornbread, feel free to add a tablespoon or two more sugar. I’ve also melted some vegan cheese on it and ate it with some marinara sauce. It was surprisingly so tasty! The possibilities are endless!

Simple Vegan Cornbread

Simple Vegan Cornbread

Ingredients

  • 1 cup all-purpose flour
  • 1 1/4 cup cornmeal
  • 1/4 cup organic cane sugar (you can add a little more if you want it sweeter)
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tbsp ground flaxseed
  • 1/3 cup melted coconut oil (or melted vegan butter)
  • 1 1/4 cup plain unsweetened almond milk
  • 1 tbsp apple cider vinegar

Instructions

  • Preheat oven to 400 degrees F. Grease an 8×8 pan.
  • In a liquid measuring cup, add almond milk and apple cider vinegar. Stir and let it sit for 5 minutes.
  • In a large bowl, add the flour, cornmeal, sugar, baking powder, salt, and ground flaxseed. Stir until well combined.
  • Add the almond milk mixture and melted coconut oil to the bowl. Stir until combined. Let it sit for 5 minutes (important!).
  • Pour batter into pan and bake for 20-25 minutes, until toothpick comes out clean. Enjoy!
