Smoked Paprika Cheddar Vegan Cheese Ball
I love cheese and crackers and I’ve been wanting to find a good vegan cheese recipe. This smoked paprika cheddar vegan cheese ball is so tasty and delicious. The flavor is incredible and the texture is perfectly smooth. Made with cashews, our friends had no idea it was vegan. They loved it! Success! This is probably one of our favorite snacks. If you are looking for a crowd pleasing and beautiful appetizer for the Super Bowl, you need to make this! Smoked Paprika Cheddar Vegan Cheese Ball

Ingredients
- 1 1/2 packed/full cups cashews, soaked for at least 4 hours and drained
- 1/2 cup nutritional yeast
- 1 tbsp juice from a lemon
- 1/4-1/2 tsp onion powder
- 1 1/2 tsp dried parsley
- 1/2 tsp smoked paprika
- 1 big clove garlic, minced
- 2-3 tbsp water, more as needed
- 1/2 tsp sea salt
- Black pepper, to taste
- 1 cup pecans, chopped
Instructions
- Place all the ingredients except for the pecans in the bowl of a food processor. Blend until smooth, adding water as needed. Make sure it is not runny. You are looking for a very thick consistency (think really thick hummus). Scoop out and form into a ball and roll in the chopped pecans. Wrap in plastic wrap and refrigerate until firm, about 4 hours. Serve with crackers and enjoy!
