Sweet & Spicy Pear Salsa

The pear baking continues with everyone’s favorite condiment, salsa!

Salsa is a fast and easy way to use up vegetables you’ve got in the refrigerator, waiting, excitedly to be used and eaten (vegetables always get excited about being eaten). Or if you’re really lucky, you’ll be able to make this with all the veggies you grew in your garden this summer! I was able to use my fresh pears and I had garden tomatoes from my in-laws (all my tomatoes get eaten the second they’re off the vine). There is NOTHING better than a fresh garden tomato… Except maybe fresh garden tomato salsa!

Sweet & Spicy Pear Salsa

Ingredients

  • 6 cloves garlic
  • 1 yellow onion
  • 1 jalepeno (seeded)
  • 3 red peppers
  • 3 green peppers
  • 6 pears
  • 10 tomatoes
  • 1/4 cup sugar
  • 1/2 cup vinegar
  • 1 tbsp salt
  • 1 tbsp soy sauce
  • 2 tsp chilli powder
  • 2 tsp paprika
  • 1 tsp red pepper flakes
  • *Tabasco to taste (optional)

Instructions

  • Chop all produce, or use a food processor to make it even quicker, and throw in large pot. Add remaining ingredients and bring to boil. Once boiling, reduce heat to medium and cook 20 minutes. Reduce heat again to low and simmer for one hour. Allow to cool. If you like chunky salsa eat as is once cool. If you prefer smooth salsa use an immersion blender to reach your desired consistency.

  • Will keep up to four weeks in the refrigerator. Or you can can it and have it on hand year round!
