I know it may be a little early, but I wanted to post these delicious healthy vegan and gluten-free pumpkin banana muffins. I&#8217;ve been eating it as a pre-workout snack, mid-afternoon snack, and as dessert. It is more like a fudgy, dense, and power muffin, so don&#8217;t expect it be like your typical fluffy, bakery muffin. I love the pumpkin, banana, and fall flavors that shine through this muffin. Feel free to mix in some chocolate chips, nuts, etc. It is only slightly sweetened because the ripe bananas really sweeten the muffins up without needing to add much else. If you are not gluten-free, you could sub the oat and almond flours with all-purpose flour or whole wheat pastry flour. However, the texture will be different and will be more like a &#8220;traditional&#8221; muffin. These muffins need to be refrigerated after it cools. I actually love eating it cold from the fridge and I think it tastes best that way. Also, my FAVORITE way to eat these is with peanut butter all over the top! In a separate large bowl, mix together mashed banana, pumpkin, flax egg, vanilla, maple syrup, oil, and almond milk. Add dry ingredients to wet ingredients and mix until just combined. Do not overmix. Fold in mix-ins if desired. Evenly divide batter between muffin cups, filling about 2\/3 of the way full.<\/span><\/div><\/li><li id=\"wprm-recipe-6481-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Bake muffins for 17-22 minutes or until a toothpick inserted into the middle of a muffin comes out clean. Let it cool in pan for 10 minutes, then transfer the muffins to a cooling rack to cool completely. Store in a ziploc bag or airtight container in the fridge.
