It&#8217;s not made with cashews like most vegan cheese sauces. The coconut milk and blended roasted butternut squash makes this sauce so silky smooth. Also, a secret ingredient that you might not expect is the miso paste. It gives the sauce a salty and umami note that elevates the flavor of this mac and cheese, so don&#8217;t leave it out! This butternut squash mac and cheese is vegan and can be made gluten-free by using your favorite gluten-free pasta. class=\"wprm-recipe-ingredient-unit\">oz<\/span>&#32;<span class=\"wprm-recipe-ingredient-name\">uncooked pasta (I used rotini or GF pasta if needed)<\/span><\/li><\/ul><\/div><\/div>\n\t<div class=\"wprm-spacer\" style=\"height: 25px;\"><\/div>\n\t<div id=\"recipe-6221-instructions\" class=\"wprm-recipe-instructions-container wprm-recipe-6221-instructions-container wprm-block-text-normal\" data-recipe=\"6221\"><h3 class=\"wprm-recipe-header wprm-recipe-instructions-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\">Instructions<\/h3><div class=\"wprm-recipe-instruction-group\"><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-6221-step-0-0\" class=\"wprm-recipe-instruction\" Line a baking pan with parchment paper or a silicone mat. Place diced butternut squash chunks on pan and drizzle 1-2 tablespoons of olive or avocado oil on top. Toss with your hands or a spoon to evenly coat the oil on the squash. Sprinkle salt (I used about 1\/4 tsp) and pepper on top. Roast in the oven for 45 minutes.<\/span><\/div><\/li><li id=\"wprm-recipe-6221-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Once there is 20 minutes left of the squash\u2019s roasting time, start to cook the pasta according to the box\u2019s direction. Drain. Keep the pot though!<\/span><\/div><\/li><li id=\"wprm-recipe-6221-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">In a blender, add the coconut milk, nutritional yeast, garlic, dijon mustard, onion powder, nutmeg, lemon juice, miso paste, salt, pepper, and roasted butternut squash. Blend on high for 1 minute until it is a nice and silky, smooth consistency.<\/span><\/div><\/li><li id=\"wprm-recipe-6221-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add the vegan butter to the pot you cooked the pasta in and heat on medium low. Once melted, add the drained pasta back into the pot and the butternut squash cheese sauce. Stir until well combined and heated through. Taste and adjust flavors to taste.
