It\u2019s a new decade and I have a feeling 2020 is going to be a great year. To be honest, I didn\u2019t love most of 2019, there were lots of lows and disappointments, but I know that without those lows, there wouldn\u2019t be any highs. So I\u2019m trying to focus on the highs and I\u2019m hopeful 2020 will be so much better! I\u2019m celebrating the new year with my favorite, and in my opinion, the best chana masala ever! It\u2019s incredibly flavorful, so easy to make, and my go to when I don\u2019t really want to labor over dinner. It\u2019s made with mostly pantry ingredients and a handful of spices. It tastes very similar to restaurant chana masala and I love to eat it with rice and naan. I usually buy my naan from Trader Joe\u2019s. I like their garlic naan the best. This makes for great leftovers as well. Saute for about 2 minutes. Add the can of diced tomatoes and tomato paste. Saute for about 3 more minutes. Add the vegetable broth and chickpeas. Stir, then partially cover, and simmer for about 25 minutes, stirring occasionally.<\/span><\/div><\/li><li id=\"wprm-recipe-6176-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add the spinach into the pot and stir. Cook for another 10 minutes. Squeeze half a lemon and stir. Taste and add more salt, pepper, or lemon if needed. Serve with rice, quinoa, and\/or naan bread.
