The crunchy veggies paired with the delicious tahini miso dressing is so dang good. It&#8217;s vegan, gluten-free, and oil-free and makes for the perfect healthy salad.<\/p>\n<p>I love all the crunchy veggies that are in this salad. You got the cabbage, corn, edamame, kale, carrots, and almonds that all give a wonderful texture. The cilantro and green onions add some extra flavor. I used fresh corn from the cob so it isn&#8217;t soggy. Feel free to switch out some of the vegetables for your favorite ones. If you don&#8217;t like almonds, you could add peanuts, cashews, or even pumpkin seeds.<\/p>\n<p>The tahini miso dressing is super easy to make and so flavorful. There is no oil in the dressing and you can&#8217;t even tell. It is so savory and makes this salad so yummy. This healthy edamame crunch salad is far from boring and way better than takeout.
