Press tofu for 20-30 minutes.
Make the sauce by adding all the ingredients except for tofu, oil, and onions into the blender. Blend until smooth.
Heat a large skillet with oil on medium high heat. Add the onions and break tofu into pieces with your hands into the pan. Spread it into an even layer across the pan and let it sit for 2 minutes without stirring so it can start to brown. Stir every 2-3 minutes. If it is burning, turn heat down to medium. You want to get the tofu to a nice golden brown color. This took me about 10 minutes.
After tofu is browned, add the sofritas sauce. Stir until everything is combined well. Saute for about 2-3 more minutes. Taste and adjust seasonings if needed.
Serve in burritos, burrito bowls, salads, tacos, etc. Enjoy!
