Warm Farro Salad with Lemon Vinaigrette (vegan, healthy, easy)
This warm farro salad with lemon vinaigrette is simple, filling, and so nourishing. It is easy to throw together and makes for the perfect lunch, dinner, and meal prep. The flavors are amazing together, yet so simple.
1cupfarro, uncooked(I used a quick cooking one from Trader Joe's)
1/3cupkalamata olives, pitted and chopped
1/3cupvegan feta
1/3cupsliced almonds
1/3 cup + 1 Tbspgolden raisins
2cupsarugula
1/2tspchili powder
lemon vinaigrette
3Tbspextra virgin olive oil
3 Tbsplemon juice
1tspdijon mustard
1/4tspsea salt
10 twistsfresh cracked black pepper
1/4tspgarlic powder
1/8tspdried basil
1/8tspdried oregano
1tsppure maple syrup
Instructions
Cook the farro according to package’s instructions.
While farro is cooking, make the lemon vinaigrette. Add all the ingredients into a liquid measuring cup or bowl and whisk until well combined. Set aside.
Once farro is done, assemble the salad. In a large bowl, add the cooked farro, olives, vegan feta, almonds, golden raisins, arugula, and chili powder. Drizzle lemon vinaigrette over the top. Toss the salad until evenly combined. Enjoy!
