Warm Farro Salad with Lemon Vinaigrette (vegan, healthy, easy)

This warm farro salad with lemon vinaigrette is simple, filling, and so nourishing. It is easy to throw together and makes for the perfect lunch, dinner, and meal prep. The flavors are amazing together, yet so simple.

Ingredients

  • 1 cup farro, uncooked (I used a quick cooking one from Trader Joe's)
  • 1/3 cup kalamata olives, pitted and chopped
  • 1/3 cup vegan feta
  • 1/3 cup sliced almonds
  • 1/3 cup + 1 Tbsp golden raisins
  • 2 cups arugula
  • 1/2 tsp chili powder

lemon vinaigrette

  • 3 Tbsp extra virgin olive oil
  • 3 Tbsp lemon juice
  • 1 tsp dijon mustard
  • 1/4 tsp sea salt
  • 10 twists fresh cracked black pepper
  • 1/4 tsp garlic powder
  • 1/8 tsp dried basil
  • 1/8 tsp dried oregano
  • 1 tsp pure maple syrup

Instructions

  • Cook the farro according to package’s instructions. 
  • While farro is cooking, make the lemon vinaigrette. Add all the ingredients into a liquid measuring cup or bowl and whisk until well combined. Set aside. 
  • Once farro is done, assemble the salad. In a large bowl, add the cooked farro, olives, vegan feta, almonds, golden raisins, arugula, and chili powder. Drizzle lemon vinaigrette over the top. Toss the salad until evenly combined. Enjoy!
