This healthy banana snack cake is so addicting and you’d never know it is made with wholesome ingredients! It’s moist, fluffy, perfectly sweet, and full of flavor. I love to eat it with some vegan coconut yogurt on top as the “frosting” or just plain. You can make a frosting for it if that’s your thing, but I’m not a huge frosting fan. This healthy banana snack cake is vegan, gluten-free, and refined sugar free too! Go ahead, eat it for breakfast because it’s made with good for you ingredients!

Healthy Banana Snack Cake (vegan, gluten-free, refined sugar free)

Ingredients

  • 2 flax eggs (2 Tbsp ground flax seed + 6 Tbsp water)
  • 2 large very ripe bananas
  • 1/4 cup coconut oil, melted
  • 1/4 cup coconut sugar
  • 1/4 cup pure maple syrup
  • 1/4 cup almond milk (or any non-dairy milk)
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 1/2 cup oat flour
  • 1/2 cup almond flour
  • 1/4 cup tapioca starch

Instructions

  • Preheat oven to 350 degrees F. Grease an 8×8 square pan.
  • In a large bowl, make the flax egg by combining the ground flax with water. Stir and set aside for 5 minutes to thicken.
  • In a medium bowl, add the oat flour, almond flour, tapioca starch, salt, cinnamon, baking soda, and baking powder. Whisk until combined.
  • In the large bowl with the flax egg, add the ripe bananas and mash until smooth. Add the coconut oil, coconut sugar, maple syrup, almond milk, and vanilla. Whisk until well combined.
  • Add the dry to the wet ingredients. Stir with a spatula until just combined. Bake for 30-35 minutes or until a toothpick comes out clean. Let it cool completely in the pan on a wire rack. Cut into squares and enjoy! I love to top it with some vegan yogurt!
