Creamy Hemp Seed Alfredo Sauce
I love the creaminess of hemp seeds and cashews. They make for the perfect pasta sauce. This creamy hemp seed alfredo sauce is packed with protein, healthy fats, and flavor. It’s vegan, gluten-free, and oil-free too! I always stay away from “white” pasta sauces because I know they are filled with dairy, but now I can thoroughly enjoy this sauce without worrying what it will do to my stomach. Basically, this is the best silky, smooth, creamy alfredo sauce you will ever eat. It pairs well with any pasta or spiralized vegetable. I loved eating it with my spiralized zucchini. This literally only takes 10 minutes to make if you’ve already soaked your raw cashews! Easiest and fastest dinner ever! Mmmm…your friends would never know it was vegan! Also, my husband gave it his stamp of approval! Yes!!!!
Creamy Hemp Seed Alfredo Sauce
Ingredients
- 1/2 cup raw cashews (make sure it is a heaping 1/2 cup)
- 1/2 cup shelled hemp seeds
- 1/2 cup plain unsweetened almond milk or any non-dairy milk
- 1/4 cup nutritional yeast
- 1 tablespoon fresh lemon juice
- 3 garlic cloves, peeled
- 1 tsp sea salt (I recommend using a full teaspoon if you are not going to salt your pasta!)
- Freshly ground black pepper, to taste
- Small pinch of nutmeg (optional)
Instructions
- Soak the cashews in warm water for at least 45-60 minutes to soften. The longer the better. Drain before using.
- Add all ingredients to a high-powered blender and blend on high for 2 minutes or until super creamy and smooth. (You can add a tablespoon more of almond milk if you like a thinner sauce.)
- Serve over your favorite pasta or veggies. Enjoy! Refrigerate leftovers.
