Acai Chia Seed Pudding (vegan, gluten-free, oil-free)

It’s still summer over here and I love a good acai chia seed pudding to keep me cool and refreshed. Chia seed pudding is one of my favorite snacks or breakfasts to make because it’s packed with protein, fiber, and healthy fats. The acai powder gives it an extra boost of nutrition and tastes amazing too! It’s so incredibly easy to make and only takes a handful of ingredients.

I love the organic acai powder from Sunfood because it’s high quality and a brand that I trust. The acai powder adds a great superfood boost to this chia seed pudding and is rich in antioxidants. This is a great nutrient dense breakfast, snack, or dessert. You can add whatever toppings you like too. I love adding fruit, nut butter, and granola to it.

It is something you can make a big batch of ahead of time to have ready all week. I am all for easy recipes and this only takes 4 ingredients to make and less than 5 minutes to whip together. The acai powder gives this pudding a berry flavor that is so delicious and really takes chia seed pudding to the next level. It is also vegan, gluten-free, refined sugar free, and oil-free too! Acai Chia Seed Pudding (vegan, gluten-free, oil-free)

This acai chia seed pudding is a nutrient dense powerhouse that is great for breakfast, as a snack, or for dessert. It is so delicious too!

Ingredients

  • 1/4 cup chia seeds
  • 1 cup almond milk
  • 1 tbsp Sunfood Superfoods acai powder
  • 1-2 tbsp pure maple syrup
  • 1/4 tsp vanilla extract (optional)

Instructions

  • In a liquid measuring cup, add the almond milk and acai powder. Whisk until well combined.
  • In a medium bowl, add the chia seeds, acai milk, maple syrup, and vanilla if using. Whisk until well combined. Refrigerate for at least 3-4 hours, stirring it again after about 2 hours. Enjoy with your favorite toppings!
