These healthy sheet pan sweet potato nachos are perfect for game day and any day really! It’s super easy to make, nourishing, and fun to eat. I used @bakosweet organic sweet potatoes that are heart healthy and packed with vitamins 🙌. These nachos are loaded with vegan cheese, corn, black beans, guac, and pico but you can customize it however you want. It makes for an easy weeknight meal that everyone will love! Ingredients: 
2 @bakosweet sweet potatoes, sliced thinly 
3 Tbsp avocado oil 
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika 
3/4 tsp sea salt
1/4 tsp pepper
3/4 cup shredded vegan cheese (I used mozzarella) 
1 cup corn (canned or fresh)
1 cup black beans, rinsed and drained
1 cup guacamole
pico de gallo
1/4 cup cilantro, chopped 
1 lime, cut into wedges 

Preheat oven to 425 degrees F. Line 2 sheet pans with parchment paper. 

In a large bowl, add sweet potato slices, avocado oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until everything is evenly coated. Place slices on the lined pans. Do not overlap them. 

Bake in the oven for 30 minutes, flipping each sweet potato round at the halfway mark. 

Once sweet potatoes are done, move them closer together until the edges touch since they shrink after baking. Sprinkle corn, beans, and vegan cheese on top. Place back in the oven for 10 minutes, or until cheese is melted. 

Dollop guacamole and pico de gallo over the top. Sprinkle cilantro on top and squeeze lime over everything. Enjoy!

2 heads Romaine lettuce, chopped
1 cup corn
1 cup cherry tomatoes, halved
1 cup carrots, grated
1 avocado, diced
2 green onions, chopped
1 1/2 cups chickpea chips or tortilla chips, lightly crushed

To make the homemade ranch dressing, add all ingredients to a high speed blender. Blend until smooth and creamy. Taste and adjust seasonings if needed. 

Heat a skillet over medium heat. Add chickpeas and bbq sauce. Stir until well combined. Let it cook for about 10 minutes, stirring frequently. It will reach a gentle bubble and become sticky. Remove from heat. 

In a large salad bowl, add the rest of the salad ingredients and the bbq chickpeas. Drizzle the homemade ranch dressing all over. Toss to combine evenly. Enjoy!

Apple Pie Chia Pudding (vegan, gluten-free, refine Apple Pie Chia Pudding (vegan, gluten-free, refined sugar free) 🍎

I’m so excited for apple season and this healthy apple pie chia pudding is the perfect fall breakfast, snack, or dessert 👏. It’s creamy and topped with cinnamon sautéed apples, granola, and coconut yogurt. You don’t need to turn on your oven and it totally satisfies those apple pie cravings. I love chia pudding because it’s so nourishing and packed with healthy fats and fiber 🙌. This flavor is so cozy and delicious! Recipe is below! 💫

chia pudding:
1 cup unsweetened almond milk (or any non-dairy milk)
1/3 cup applesauce
1 Tbsp pure maple syrup
1 tsp vanilla extract
1/4 tsp cinnamon
1/4 cup chia seeds

sautéed apples:
1 apple, chopped
3 Tbsp water
1 Tbsp pure maple syrup
1/2 tsp cinnamon

topping:
coconut yogurt (I used @harmlessharvest) 
granola (I used my homemade applesauce granola)

Add all chia pudding ingredients in a medium bowl. Whisk until well combined. Cover and place in the fridge for one hour. Stir again to make sure the chia seeds don’t clump up. Place back in the fridge for 4 hours or overnight. Once ready to eat, make the sautéed apples. In a saucepan over medium heat, add the apples, water, maple syrup, and cinnamon. Saute for about 8 minutes, or until apples are softened. You can add more water or maple syrup if needed. Stir the chia pudding before serving. Top with sautéed apples, granola, yogurt, and whatever toppings you desire. Enjoy!
