Pressure Cooker Plum Baked Oats (vegan, gluten-free, oil-free)

Don’t want to turn on the entire oven to make baked oats? This super easy pressure cooker plum baked oats tastes like an upside down plum cake but in breakfast form. It’s healthy, nourishing, and delicious.

The batter comes together in 5 minutes or less. All you have to do is place everything in a food processor or small blender and blend until smooth or mostly smooth. If you don’t have a blender or food processor, you can use oat flour or instant oats in place of the rolled oats and just mix everything in a bowl. The oat flour or blending the mixture will produce more of a cakey texture. If you use instant oats or rolled oats, it will be more like oatmeal texture. All are delicious, it just depends on your preference of texture.

After you make the batter, place 1 cup of water in the bowl of your pressure cooker and place the trivet inside. Cover the ramekin with your oat mixture with foil and place on top of the trivet. Close the pressure cooker and make sure the valve is in the sealed position. Cook on high for 15 minutes and then enjoy warm! I love to eat it with some coconut yogurt on top and an extra sprinkle of cinnamon.

I used my Proctor Silex Simplicity Pressure Cooker to make these baked oats. It’s a smaller pressure cooker that doesn’t take up a lot of space. The features are simple and easy to use. This plum baked oats is a great breakfast to make if you don’t have an oven or are a college student living in a small apartment.

This pressure cooker plum baked oats is easy to make and you don't even need an oven. It tastes like dessert for breakfast, but healthy!

Ingredients

  • 1/3 cup rolled oats
  • 2 tbsp vanilla protein powder (I love Nuzest, use code NUTSABOUTGREENS15)
  • 1 tsp ground flaxseed
  • 2 tbsp vegan vanilla yogurt
  • 1/4 tsp baking powder
  • pinch of salt
  • 3 tbsp non-dairy milk
  • 1 tsp pure maple syrup
  • 1/4 tsp cinnamon
  • dash of ground cardamom
  • 1 tsp cashew butter (or any nut/seed butter)
  • 1 plum, sliced
  • 1 tsp coconut sugar (or brown sugar)

Instructions

  • Add all ingredients except for the plum and coconut sugar in a small blender or food processor. Blend until smooth or mostly smooth. Alternatively, you can use oat flour or instant oats and stir everything in a bowl. It just depends on your preference in texture of the oats.
  • Place blended mixture into a large ramekin. Place sliced plums on top. Sprinkle coconut sugar over the plums. Tightly cover the ramekin with a piece of foil.
  • In the bowl of your pressure cooker, add 1 cup of water. Place the trivet inside and set your ramekin on top of the trivet. Cover with the lid and make sure the valve is in the sealed position. Cook on high pressure for 15 minutes, then do a natural release for 3 minutes. Then release the remaining pressure. Using oven mitts, carefully remove the ramekin out of the pressure cooker and remove the foil. Enjoy warm! I topped mine with extra yogurt and cinnamon.
