The chocolate shell adds the perfect touch and makes it seem like you are eating a chocolate covered strawberry. Overnight Oats:
1/2 cup rolled oats
1 Tbsp chia seeds
2 Tbsp @bethanyspantry probiotic cacao protein powder (use code: nutsaboutgreens to save $$)
3/4 cup almond milk (or any non-dairy milk)
1/2 cup chopped strawberries
1 Tbsp pure maple syrup, or to taste
2 Tbsp coconut yogurt (I like @harmlessharvest)
1 Tbsp cashew butter (or any nut butter)

Chocolate Shell:
2 Tbsp dairy-free chocolate (I used @hukitchen) 
1 tsp coconut oil 

Add all the overnight oats ingredients in a glass tupperware. Stir until well combined. Cover and place in the fridge for at least 4 hours or overnight. When ready to eat, melt chocolate and coconut oil in the microwave in 30 second increments, stirring after each increment until smooth. Drizzle over the overnight oats and place in the fridge for 15 minutes. Sprinkle with flaky sea salt if desired and enjoy!

It is packed with flavor and spice, you won’t be able to stop eating it. It’s so easy to make and so comforting. The sweet and savory vegan bulgogi paired with the spicy and tangy kimchi, melted cheese, creamy gochujang aioli, and crunchy tortilla chips is like a party in your mouth. Ingredients 
tortilla chips
kimchi, chopped (make sure it is vegan) 
vegan bulgogi (recipe on my blog) 
shredded vegan mozzarella cheese
gochujang aioli (recipe below) 
2 stalks green onions, chopped
sesame seeds

gochujang aioli:
1/3 cup @chosenfoods vegan mayo 
1 Tbsp gochujang
1 tsp minced garlic
1 tsp rice vinegar 

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Pour chips all over the baking sheet. Generously sprinkle vegan bulgogi and kimchi on top of chips. Sprinkle mozzarella cheese all over the top. Bake for 10-12 minutes or until cheese is melted. Make gochujang aioli by combining the mayo, gochujang, garlic, and rice vinegar in a small bowl. Drizzle gochujang aioli all over the top of the nachos. Then sprinkle green onions and sesame seeds on top. Enjoy!

You only need 6 main ingredients and a few minutes to whip up. This chia pudding is naturally sweetened, vegan, gluten-free, and will satisfy your chocolate cravings 🍫. Chia seeds are high in fiber and protein, making it great for breakfast or as a healthy snack or treat. Recipe is below, so make sure to hit save! 

Ingredients:
3/4 cup almond milk (or any non-dairy milk)
200g silken tofu (about 7.2 oz) 
1/3 cup chia seeds
3 Tbsp pure maple syrup
2 Tbsp cacao powder
3 Tbsp peanut butter 
1/2 tsp vanilla extract 

In a blender, add all of the ingredients except the chia seeds. Blend until smooth and creamy. Pour into a jar or glass tupperware. Add the chia seeds and whisk until well combined. Cover and place in the fridge for an hour. Stir again to break up the chia seed clumps. Place back in the fridge for at least 4 hours or overnight. When ready to eat, give it a good stir and enjoy! Top with coconut yogurt, crushed peanuts, and some chopped dark chocolate or cacao nibs!

Ingredients:
2 tsp extra virgin olive oil
3/4 cup unsweetened desiccated shredded coconut
heaping 1/3 cup @eatpistakio pistachio spread, plus more for drizzling
1 cup dairy-free yogurt (I used @foragerproject plain unsweetened)
1/3 cup non-dairy chocolate chips (I used @hukitchen)
1 tsp coconut oil 
1 cup sliced strawberries 

Heat olive oil in a medium skillet over medium low heat. Add shredded coconut and stir continuously until coconut starts to turn golden. Once golden, turn heat off and add the pistachio spread. Stir until everything is well combined, adding more pistachio spread if needed. Add the chocolate chips and coconut oil to a small bowl and microwave in 30 second increments until chocolate is melted, stirring after each increment. Assemble the parfait by layering yogurt, strawberries, coconut pistachio mixture, a drizzle of melted dark chocolate, a drizzle of pistachio spread, and more strawberries. Enjoy!

I’m probably the only one who did NOT like the vir I’m probably the only one who did NOT like the viral 2-ingredient Japanese cheesecake hack (well 4 ingredients since I made an ube version). The cookies touching the yogurt literally turned to mush and were so soggy 🥴. Maybe because I used coconut yogurt and it is runnier than traditional greek yogurt? I don’t know, but I couldn’t stand to waste precious coconut yogurt so I turned it into a yogurt ube bread instead 💁🏻‍♀️! The bread turned out lightly sweetened, fluffy, and soft…similar to pancake bread! The kids LOVED it and I’m so glad I didn’t throw out the yogurt. I topped my piece with some biscoff and of course flaky sea salt. It was so good and much better than the mush 😆. Leaving the recipe to the yogurt ube bread below! Ingredients:
2 flax eggs (2 Tbsp ground flaxseed + 6 Tbsp water)
1 ripe banana, mashed
1 cup ube yogurt (from the cheesecake hack, cookies and all; you can use regular coconut yogurt too and just add 1 tsp ube extract)
1/3 cup coconut sugar (add more for a sweeter bread)
1/4 cup avocado oil
3 Tbsp almond milk (or any non-dairy milk)
1 tsp vanilla extract
1 tsp ube extract
2 cups all-purpose flour
2 tsp baking powder 
1/2 tsp sea salt

Preheat oven to 350 degrees F. Line a 9x5 loaf pan with parchment paper. In a large bowl, add the ground flaxseed and water. Stir and set aside for 5 minutes to thicken. Then add the mashed banana, yogurt, coconut sugar, oil, milk, vanilla, and ube extract. Whisk until well combined. Add the flour, baking powder, and salt. Stir with a spatula until just combined (don’t over mix). Pour batter into the loaf pan. Bake for 45-55 minutes, or until a toothpick inserted into the middle comes out clean. Let it cool in the pan for 10 minutes then remove and place on a wire rack to cool completely. Enjoy! Store leftovers in an airtight container on the counter. It will be even more flavorful the next day.

I don’t know why but breakfast burritos always hit the spot. This ultimate vegan breakfast burrito is loaded with potatoes, veggies, plant based eggs, cheese, and sriracha for some spice. It’s such a flavor bomb, high in protein, filling, and so delicious! It’s my husband’s favorite for breakfast! It’s perfect for meal prep and freezer friendly too! I love making a huge batch and storing them in my freezer to make mornings easier. Also it’s way cheaper than paying $10+ for one at a restaurant! Recipe is below so make sure to hit save! 💫

Ingredients:
3 @eatjust folded egg
1 1/2 -2 cups cooked hash browns
3 slices vegan cheese (I used @violife_foods)
sriracha
1 Tbsp extra virgin olive oil
1 cup chopped mushrooms
1/2 cup vegan ground beef crumbles
1/2 cup red bell pepper, chopped small
1 clove garlic, minced
2 handfuls of kale or spinach
1/4 tsp sea salt 
fresh cracked black pepper
3 large tortillas

On medium high heat, add the olive oil to a skillet. Then add the mushrooms, vegan beef crumbles, and bell pepper. Saute until mushrooms soften and starts to brown. Add the garlic, kale, salt, and pepper. Saute until kale is wilted. Taste and adjust seasonings if needed. 

Heat the Just Egg Folded according to package’s instructions. Then slice each in half.

Take a tortilla and assemble the breakfast burrito. Add a slice of cheese, a heaping 1/2 cup of hash browns, 2 halves of the folded vegan egg, and 1/3 of the vegetable/beef stir fry. Drizzle sriracha on top. Wrap the breakfast burrito by folding in the two sides over the filling, then roll the burrito tightly and tucking in the sides as you roll. Repeat with the other 2 tortillas.

Place burrito on a hot skillet and brown each side. Enjoy!

Serve this sticky sesame cauliflower and chickpeas over some rice and you got yourself a flavorful and delicious healthy meal. It’s so comforting and a yummy way to eat your veggies! Ingredients:
1 head cauliflower, cut into florets
1 can chickpeas, rinse and drain
avocado oil
garlic powder
onion powder
sea salt
fresh cracked black pepper
2 Tbsp sesame seeds

sauce: 
2 cloves garlic, minced
1/3 cup soy sauce (use tamari if GF)
1/3 cup pure maple syrup
1 Tbsp toasted sesame oil
1/2 tsp ground ginger
3 Tbsp rice vinegar
2 tsp sriracha 
1 Tbsp cornstarch
1/4 cup water

Preheat oven to 425 degrees F. Line a baking sheet with parchment paper or a silicone mat. 

Place cauliflower florets and chickpeas on the baking sheet. Spray with avocado oil all over. Generously sprinkle garlic powder, onion powder, salt, and pepper all over the cauliflower and chickpeas. Roast in the oven for 30-35 minutes, stirring halfway through. 

While the cauliflower and chickpeas are baking, make the sauce. In a saucepan over medium heat, add the garlic, soy sauce, maple syrup, toasted sesame oil, ground ginger, rice vinegar, and sriracha. Whisk until well combined and bring to a simmer. Mix the cornstarch and water in a small bowl and then add it to the boiling sauce. Whisk until well combined and sauce thickens, about 2 minutes. Turn off heat and set aside. 

Once cauliflower and chickpeas are done baking, add the sauce all over the top. Stir until everything is evenly combined in the sauce. Sprinkle sesame seeds on top and stir. Serve with rice and top with more sesame seeds and green onions if desired. Enjoy!
