Dubai Chocolate Strawberry Yogurt Parfait (vegan, Dubai Chocolate Strawberry Yogurt Parfait (vegan, gluten-free) 🍫🍓

This healthier Dubai chocolate strawberry yogurt parfait is so dreamy, easy to make, way cheaper, and completely vegan and gluten-free. Instead of using kataifi, I used desiccated coconut shreds since it’s easier to find. The pistachio coconut filling is layered with creamy yogurt, juicy strawberries, and dark chocolate. It is incredibly delicious and perfect for Valentine’s Day 💕! You can have it for breakfast, dessert, or as a snack. I’m still dreaming about this parfait and you will want to make it on repeat! Ingredients:
2 tsp extra virgin olive oil
3/4 cup unsweetened desiccated shredded coconut
heaping 1/3 cup @eatpistakio pistachio spread, plus more for drizzling
1 cup dairy-free yogurt (I used @foragerproject plain unsweetened)
1/3 cup non-dairy chocolate chips (I used @hukitchen)
1 tsp coconut oil 
1 cup sliced strawberries 

Heat olive oil in a medium skillet over medium low heat. Add shredded coconut and stir continuously until coconut starts to turn golden. Once golden, turn heat off and add the pistachio spread. Stir until everything is well combined, adding more pistachio spread if needed. Add the chocolate chips and coconut oil to a small bowl and microwave in 30 second increments until chocolate is melted, stirring after each increment. Assemble the parfait by layering yogurt, strawberries, coconut pistachio mixture, a drizzle of melted dark chocolate, a drizzle of pistachio spread, and more strawberries. Enjoy!

I’m probably the only one who did NOT like the vir I’m probably the only one who did NOT like the viral 2-ingredient Japanese cheesecake hack (well 4 ingredients since I made an ube version). The cookies touching the yogurt literally turned to mush and were so soggy 🥴. Maybe because I used coconut yogurt and it is runnier than traditional greek yogurt? I don’t know, but I couldn’t stand to waste precious coconut yogurt so I turned it into a yogurt ube bread instead 💁🏻‍♀️! The bread turned out lightly sweetened, fluffy, and soft…similar to pancake bread! The kids LOVED it and I’m so glad I didn’t throw out the yogurt. I topped my piece with some biscoff and of course flaky sea salt. It was so good and much better than the mush 😆. Leaving the recipe to the yogurt ube bread below! Ingredients:
2 flax eggs (2 Tbsp ground flaxseed + 6 Tbsp water)
1 ripe banana, mashed
1 cup ube yogurt (from the cheesecake hack, cookies and all; you can use regular coconut yogurt too and just add 1 tsp ube extract)
1/3 cup coconut sugar (add more for a sweeter bread)
1/4 cup avocado oil
3 Tbsp almond milk (or any non-dairy milk)
1 tsp vanilla extract
1 tsp ube extract
2 cups all-purpose flour
2 tsp baking powder 
1/2 tsp sea salt

Preheat oven to 350 degrees F. Line a 9x5 loaf pan with parchment paper. In a large bowl, add the ground flaxseed and water. Stir and set aside for 5 minutes to thicken. Then add the mashed banana, yogurt, coconut sugar, oil, milk, vanilla, and ube extract. Whisk until well combined. Add the flour, baking powder, and salt. Stir with a spatula until just combined (don’t over mix). Pour batter into the loaf pan. Bake for 45-55 minutes, or until a toothpick inserted into the middle comes out clean. Let it cool in the pan for 10 minutes then remove and place on a wire rack to cool completely. Enjoy! Store leftovers in an airtight container on the counter. It will be even more flavorful the next day.

I don’t know why but breakfast burritos always hit the spot. This ultimate vegan breakfast burrito is loaded with potatoes, veggies, plant based eggs, cheese, and sriracha for some spice. It’s such a flavor bomb, high in protein, filling, and so delicious! It’s my husband’s favorite for breakfast! It’s perfect for meal prep and freezer friendly too! I love making a huge batch and storing them in my freezer to make mornings easier. Also it’s way cheaper than paying $10+ for one at a restaurant! Recipe is below so make sure to hit save! 💫

Ingredients:
3 @eatjust folded egg
1 1/2 -2 cups cooked hash browns
3 slices vegan cheese (I used @violife_foods)
sriracha
1 Tbsp extra virgin olive oil
1 cup chopped mushrooms
1/2 cup vegan ground beef crumbles
1/2 cup red bell pepper, chopped small
1 clove garlic, minced
2 handfuls of kale or spinach
1/4 tsp sea salt 
fresh cracked black pepper
3 large tortillas

On medium high heat, add the olive oil to a skillet. Then add the mushrooms, vegan beef crumbles, and bell pepper. Saute until mushrooms soften and starts to brown. Add the garlic, kale, salt, and pepper. Saute until kale is wilted. Taste and adjust seasonings if needed. 

Heat the Just Egg Folded according to package’s instructions. Then slice each in half.

Take a tortilla and assemble the breakfast burrito. Add a slice of cheese, a heaping 1/2 cup of hash browns, 2 halves of the folded vegan egg, and 1/3 of the vegetable/beef stir fry. Drizzle sriracha on top. Wrap the breakfast burrito by folding in the two sides over the filling, then roll the burrito tightly and tucking in the sides as you roll. Repeat with the other 2 tortillas.

Place burrito on a hot skillet and brown each side. Enjoy!

Skip the takeout and make this healthy sheet pan sticky sesame cauliflower and chickpeas. The cauliflower and chickpeas are not deep fried or battered, but instead roasted in the oven until golden. Then a savory, sticky sesame sauce is poured on top, making this a delicious and healthier alternative than the classic. Serve this sticky sesame cauliflower and chickpeas over some rice and you got yourself a flavorful and delicious healthy meal. It’s so comforting and a yummy way to eat your veggies! Ingredients:
1 head cauliflower, cut into florets
1 can chickpeas, rinse and drain
avocado oil
garlic powder
onion powder
sea salt
fresh cracked black pepper
2 Tbsp sesame seeds

sauce: 
2 cloves garlic, minced
1/3 cup soy sauce (use tamari if GF)
1/3 cup pure maple syrup
1 Tbsp toasted sesame oil
1/2 tsp ground ginger
3 Tbsp rice vinegar
2 tsp sriracha 
1 Tbsp cornstarch
1/4 cup water

Preheat oven to 425 degrees F. Line a baking sheet with parchment paper or a silicone mat. 

Place cauliflower florets and chickpeas on the baking sheet. Spray with avocado oil all over. Generously sprinkle garlic powder, onion powder, salt, and pepper all over the cauliflower and chickpeas. Roast in the oven for 30-35 minutes, stirring halfway through. 

While the cauliflower and chickpeas are baking, make the sauce. In a saucepan over medium heat, add the garlic, soy sauce, maple syrup, toasted sesame oil, ground ginger, rice vinegar, and sriracha. Whisk until well combined and bring to a simmer. Mix the cornstarch and water in a small bowl and then add it to the boiling sauce. Whisk until well combined and sauce thickens, about 2 minutes. Turn off heat and set aside. 

Once cauliflower and chickpeas are done baking, add the sauce all over the top. Stir until everything is evenly combined in the sauce. Sprinkle sesame seeds on top and stir. Serve with rice and top with more sesame seeds and green onions if desired. Enjoy!

I’m not one for trying many food trends I see, but I had to try the viral soup dumpling lasagna that has been all over Instagram. I conveniently had some extra vegetarian potsticker filling and thought I would give this dumpling lasagna a try. It is definitely way easier and faster to make than folding dumplings and it’s a fun/unique twist on the classic. However, I do prefer to eat dumplings the traditional way because I think the ratio between filling and wrapper is better. Also, I thought the wrappers got a little too soggy in this lasagna and the texture wasn’t ideal. It was still very tasty though and worth a try if you are curious! Recipe is below if you want to try it! 💫

Ingredients: 
dumpling wrappers or wonton wrappers
vegetarian dumpling filling (recipe on my blog)
3-4 Tbsp vegetable broth 
chili oil/crisp and green onions for topping

In a large ramekin, place a dumpling wrapper on the bottom. Place about 1-1.5 Tbsp of dumpling filling on top. Repeat until you get to the top. Once you get to the last filling layer, pour about 3-4 Tbsp of vegetable broth on top. Then add 2 layers of the wrapper on top. Steam for 15 minutes. Top with chili oil/chili crisp and chopped green onions. Enjoy!

These 3 ingredient pomegranate chocolate peanut butter cups could not be any easier and satisfies those sweet cravings without giving you a sugar crash 👏. Keep these in your freezer so you can grab one whenever you want. The pops of pomegranate add a delicious juicy bite and cuts through the peanut butter and chocolate. It’s such a simple no bake healthy treat that will get you through all the stressful and busy days during the holidays. Recipe is below! 💫

Ingredients: 
your favorite chocolate (I like dark and used @hukitchen)
natural peanut butter (just peanuts and salt) 
pomegranate seeds 
flaky sea salt on top (optional)

Melt your favorite chocolate in the microwave in 30 second increments, stirring after each increment until smooth. Place a spoonful of melted chocolate in a mini silicone muffin pan (or you can use a regular size muffin pan). Place a spoonful of peanut butter on top. Then place a spoonful of pomegranate on top of the peanut butter. Drizzle some melted dark chocolate on top of the pomegranate and sprinkle some flaky sea salt if desired. Place in the freezer for at least 15 minutes to set. Carefully pop each cup out and enjoy! Store in an airtight container in the freezer. Let it sit out for 5-10 minutes when you want to eat one.
