Peanut Butter Chocolate Energy Balls
I just got a new (bigger) food processor and I’m obsessed with it. It’s much bigger than my old one and it does so much more. I am a big fan of Lara bars and I couldn’t wait to use this food processor to make homemade Lara bars. These peanut butter chocolate energy balls are so easy to whip up and naturally sweetened with dates. Dates are very versatile and are great to use to make healthy granola bars. Most granola bars have a lot of sugar in them and random ingredients I don’t even know how to pronounce. I love Lara bars because they are all natural and made with only a few ingredients, all of which I know. These peanut butter chocolate energy bars are filled with protein, fiber, and healthy fats. They are the perfect mid-day, pre-workout, or post-workout snack. Filled with all natural peanut butter, chia seeds, and dark chocolate, it practically tastes like dessert every time you need a healthy snack!
Peanut Butter Chocolate Energy Balls
Ingredients
- 1 cup packed dates, pitted (if dry, soak in warm water for 10 minutes, then drain well)
- 3-4 tbsp all natural salted peanut or almond butter
- 1/4 cup dairy free dark chocolate, roughly chopped
- 1 tbsp chia seeds (or sub flax or hemp seeds)
- 2/3 cup gluten free rolled oats
Instructions
- Pulse dates in a food processor or blender until they’re in small pieces or it forms a ball.
- Add oats, chocolate, chia seeds and peanut butter and pulse or mix until combined. You want there to be consistently small pieces but not overly processed.
- Carefully roll into 1-inch balls, using the warmth of your hands to mold them together. Should yield around 14 balls depending on how big you make them.
- Put it in the fridge or freezer to set for 15 minutes. Otherwise, eat as is! Will keep fresh in an air-tight bag or container for up to a week in the fridge. Freeze for longer term storage.

I love this post. You sound just like my Wife, who too is obsessed with her food processor. We started off with a little Kenwood food processor and now have a large 4ltr Kitchen Aid beast!
