Ingredients
- 4 oz arugula (half of an 8oz bag)
- 2 fuyu persimmons, sliced
- 1/3 cup pomegranate seeds
- 2 Tbsp pumpkin seeds
- 1/3 cup chopped pecans
- 1/3 cup vegan feta
Cinnamon Maple Dressing
- 2 Tbsp extra virgin olive oil
- 2 Tbsp apple cider vinegar
- 1 1/2 Tbsp pure maple syrup
- 1 tsp dijon mustard
- 1/4 tsp sea salt
- 1/8 tsp black pepper
- 1/4 tsp cinnamon
Instructions
- In a large bowl, add all the salad ingredients.
- In a small bowl or liquid measuring cup, add the dressing ingredients. Whisk until well combined.
- Pour dressing all over the top of the salad. Toss to combine. Enjoy!
