Easy Vegan Korean Beef and Rice (vegan, gluten-free)
Here is an easy dinner that comes together quick and only requires a few ingredients. This easy vegan Korean beef and rice tastes just like the well-known Korean bulgogi but made with Gardein’s beefless crumbles/ultimate beefless grounds. The flavors are so delicious and reminds me of my childhood. It’s another comfort food to me…basically any Asian food with rice is comfort food. I don’t normally buy more processed “fake meat” but sometimes you just gotta splurge when you want to eat something like the real thing. This vegan Korean “beef” really does taste so close to the real thing. If you are new to going plant based or are trying to incorporate a few meatless days a week, this is the perfect recipe for you to try. It will remind you of Korean BBQ without all the animal products. This makes for great meal prep too! It reheats well and it tastes good with noodles too! Next time you go to the store, grab yourself some Gardein beefless grounds and make this dish that the whole family will love!
Easy Vegan Korean Beef and Rice (vegan, gluten-free)
Ingredients
- 1 tbsp sesame oil
- 1/2 yellow onion, diced
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 12 oz Gardein Beefless Crumbles (also called Ultimate Beefless Ground)
- 1/2 cup brown sugar
- 1/4 cup low sodium soy sauce
- 1/4 tsp crushed red pepper flakes, or to taste
- 1/4 green onions, thinly sliced
- white sesame seeds for garnish
- 4 cups cooked jasmine rice
Instructions
- In a large skillet, heat oil on medium high heat. Add the onions and saute until it starts to brown. Add the garlic and ginger and saute for 30 seconds. Add the Gardein beefless crumbles and saute for 4-5 minutes.
- Add the brown sugar, soy sauce, and crushed red pepper flakes to the pan. Saute for another 4 minutes, until all the liquid has been absorbed.
- Turn heat off and add the green onions. Stir to combine. Serve with jasmine rice and sprinkle sesame seeds for garnish. Enjoy!
