This healthy cinnamon applesauce oat muffin is fluffy, lightly sweetened, and so good with a drizzle of your favorite nut butter! It’s vegan, oil-free, and refined sugar free too! They are easy to make and taste incredible when you use homemade applesauce or good quality applesauce. I used my homemade cinnamon applesauce recipe (recipe on my Instagram reel post) and I really think it enhances the flavor of these muffins because the ingredients in these muffins are pretty simple. A smear of apple butter would also be amazing on these muffins. These cinnamon applesauce oat muffins are kid friendly, perfect as a snack, and healthy enough for breakfast!

A simple, healthy muffin that is easy to make, kid friendly, and only lightly sweetened. It tastes amazing with some nut or apple butter!

Ingredients

  • 1 1/4 cup whole wheat pastry flour (or half whole wheat, half AP flour)
  • 3/4 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • scant 1/2 tsp sea salt
  • 1/2 heaping tsp cinnamon (more if your applesauce doesn’t have cinnamon)
  • 1 1/4 cup cinnamon applesauce
  • 1/3 cup coconut sugar, add more if you want a sweeter muffin (or brown sugar)
  • 1 tsp apple cider vinegar
  • 1/3 cup unsweetened almond milk (or any non-dairy milk)
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 375 degrees F. Line a muffin pan with paper liners.
  • In a large bowl, add the whole wheat pastry flour, oats, baking powder, baking soda, salt, and cinnamon. Stir until combined.
  • In a medium bowl, add the applesauce, coconut sugar, apple cider vinegar, almond milk, and vanilla. Stir until well combined.
  • Add the wet to the dry. Stir with a spatula until just combined, don’t overmix! Divide batter into the muffin pan cavities. Bake for 17-19 minutes, or until a toothpick comes out clean. Let it cool in the pan for 10 minutes. Place muffins on a wire rack to cool completely. Enjoy!
