1/2heaping tspcinnamon (more if your applesauce doesn’t have cinnamon)
1 1/4cupcinnamon applesauce
1/3cupcoconut sugar, add more if you want a sweeter muffin (or brown sugar)
1tspapple cider vinegar
1/3cupunsweetened almond milk (or any non-dairy milk)
1tspvanilla extract
Instructions
Preheat oven to 375 degrees F. Line a muffin pan with paper liners.
In a large bowl, add the whole wheat pastry flour, oats, baking powder, baking soda, salt, and cinnamon. Stir until combined.
In a medium bowl, add the applesauce, coconut sugar, apple cider vinegar, almond milk, and vanilla. Stir until well combined.
Add the wet to the dry. Stir with a spatula until just combined, don’t overmix! Divide batter into the muffin pan cavities. Bake for 17-19 minutes, or until a toothpick comes out clean. Let it cool in the pan for 10 minutes. Place muffins on a wire rack to cool completely. Enjoy!
