Vegan Apple Crumb Cake

This vegan apple crumb cake is so delicious and perfect for dessert or brunch. It has the yummiest layer of cinnamon apples and a cinnamon sugar crumb topping. The cake part is soft, tender, and moist. All the textures combined make for the yummiest apple crumb cake. Talk about YUM and it just screams fall.

It’s so comforting and cozy, yet it’s healthier than your average crumb cake and isn’t loaded with sugar and oil. The natural sweetness from the apples taste amazing. It’s similar to a coffee cake, but a little lighter in texture. All the cinnamon flavors pair so well with the apples.

I used homemade applesauce in the cake batter and I think it really makes a difference flavor wise. If you can, use homemade applesauce or a good quality store bought applesauce. It adds a nice sweetness to the cake too. I also used apples from my tree and they were so sweet and juicy. This apple crumb cake is moist, fuffy, and spiced perfectly. All the layers to this crumb cake just come together in the most delicious way.

Vegan Apple Crumb Cake

This vegan apple crumb cake is so delicious and would be perfect for brunch or dessert. It's filled with apples, has a soft and tender cake, and the yummiest crumb topping.

Ingredients

  • 1 1/4 cup all-purpose flour
  • 2 tsp cinnamon, divided
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/3 cup brown sugar (or coconut sugar)
  • 2 tbsp pure maple syrup
  • 1/4 cup coconut oil, melted
  • 1/3 cup applesauce (I used homemade)
  • 1/3 cup almond milk (or any non-dairy milk)
  • 1 tsp vanilla extract
  • 1/2 tsp apple cider vinegar
  • 2 apples, chopped small (about 2 cups, I used Fuji)

Crumb Topping

  • 1/2 cup all-purpose flour
  • 3 Tbsp pure organic cane sugar
  • 1 tsp cinnamon
  • 2 tbsp coconut oil, melted

Instructions

  • Preheat oven to 350 degrees F. Grease or line an 8 inch cake pan.
  • Prepare the crumb topping by adding the flour, sugar, and cinnamon to a small bowl. Stir until combined. Add the melted coconut oil and stir until combined. Set aside while you prepare the cake.
  • In a large bowl, add the flour, 1 tsp of cinnamon, baking powder, baking soda, and salt. Whisk until well combined.
  • In a medium bowl, add the brown sugar, maple syrup, coconut oil, applesauce, milk, vanilla, and apple cider vinegar. Whisk until well combined.
  • Add the wet to the dry. Stir with a spatula until just combined. Don’t overmix! Pour batter into the prepared pan.
  • Add apples to the medium bowl that had your wet ingredients in. Toss with 1 tsp of cinnamon. Add the apples on top of the cake batter.
  • Sprinkle the crumb topping evenly over the apples. Bake for 30-35 minutes, or until toothpick comes out clean. Let it cool for 30 minutes before serving! Enjoy!
