Healthier Furikake Chex Mix (vegan)

Healthier Furikake Chex Mix (vegan)

Ingredients

  • 6 heaping cups Chex cereal (I did half rice and half corn)
  • 2 cups pretzels
  • 1 1/2 cups sesame sticks (I get mine at Trader Joe’s, Sprouts, or Whole Foods)
  • 1 cup peanuts (raw or roasted works)
  • 1/4 cup vegan butter, melted
  • 1/3 cup pure maple syrup
  • 1 tbsp low-sodium soy sauce
  • 1/4 tsp salt
  • 1/3 cup vegan furikake (see post for which one I use)

Instructions

  • Preheat oven to 250 degrees F. Line a baking sheet with a silicone mat or parchment paper.
  • In a very large bowl, add the Chex, pretzels, sesame sticks, and peanuts. Stir with a spatula until well combined.
  • In a small bowl, add the melted butter, maple syrup, soy sauce, and salt. Stir until well combined. Pour over Chex mixture. Stir with a spatula until everything is evenly coated. Then sprinkle the furikake over the mixture. Stir until well combined.
  • Spread chex mix over the lined pan. Bake for 70-75 minutes, stirring every 15 minutes. Let it cool on the pan completely. It will crisp up more as it cools. Enjoy! Store in an airtight container.
