Healthy Coconut Clusters (vegan, gluten-free, refined sugar free) ✨

These insanely addicting healthy coconut clusters are a copycat version of the store bought ones and SO easy to make at home. They are sweet, salty, crunchy, and chewy 🤤. It is so hard to stop eating them! These coconut clusters are packed with fiber and healthy fats too, which makes for the perfect snack 🙌! You only need 6 simple ingredients and a few minutes to make these. Prep them for the week and store them in your freezer! The recipe is below, so make sure to hit save! 💫

Ingredients:
1 1/2 cup coconut flakes
3/4 cup raw pumpkin seeds
2 Tbsp hemp hearts/seeds
2 Tbsp chia seeds
1/4 tsp sea salt
1/3 cup organic agave (I used @madhavafoods)

Preheat oven to 350 degrees F. Line a baking sheet with parchment or use a silicon mat.�
In a large bowl, add the coconut, pumpkin seeds, hemp hearts, chia seeds, and salt. Mix with a spatula until well combined. Add the agave and mix until everything is evenly coated and combined.�
Place about a 1.5 tablespoon sized clusters on the lined baking pan (I used a cookie scoop). Bake for 10-13 minutes, or until coconut flakes turn a nice golden brown. The clusters will spread in the oven a bit so when they come out of the oven, take a spatula and push the sides into the center of the clusters to shape them. Let it cool on the pan for at least 45 minutes. When they cool, they will harden into the clusters. Remove carefully once cooled. Enjoy! Store extras in an airtight container in the freezer. You can eat them straight from the freezer. �.

Ingredients:
1 flax egg (1 Tbsp ground flaxseed + 3 Tbsp water)
1 Tbsp avocado oil
3 Tbsp pure maple syrup
1 tsp vanilla extract
1 cup almond flour
pinch of salt
1/4 tsp baking powder
1/4 cup dairy-free chocolate chips
1/4 cup lightly crushed @reeliefoods sea salt plantain chips

Preheat oven to 350 degrees F. Grease a mini cast iron skillet. Mine was about 4 inches in diameter.

In a medium bowl, make the flax egg by mixing the ground flaxseed with water. Let it sit for 5 minutes to thicken.

Then add the oil, maple syrup, and vanilla extract. Stir until combined. Add the almond flour, salt, and baking powder. Stir until combined. Fold in chocolate chips and plantain chips.

Pour batter into your skillet and smooth it out with the spatula. Press some extra chocolate chips and plantain chips on top. Bake for 16-18 minutes until golden on top.

Let it cool for 15 minutes. Top with ice cream and flaky sea salt if desired and enjoy!

Ingredients:
1 cup chopped mangoes
1 cup raspberries
1-2 Tbsp pure maple syrup, or to taste
1 heaping cup coconut yogurt (I used @cocojune_organic)
melted dark chocolate (I used @hukitchen)
shredded coconut for topping, optional

Add mangoes, raspberries, maple syrup, and coconut yogurt to a bowl. Mix with a spatula until well combined. Pour onto a parchment lined baking sheet and spread evenly into a rectangle. Place in the freezer for 30 minutes. Pour melted chocolate over the top and evenly spread with a spatula. Sprinkle shredded coconut on top. Place in the freezer for at least 1-2 hours or until set. Chop and enjoy! I like to let it sit out for 5 minutes before I eat it. Store in the freezer.

This blackberry lemon chia pudding is creamy, tangy, and so delicious 🍋. The creamy lemon chia pudding is layered with a quick homemade blackberry jam. Top it with some coconut yogurt, fresh blackberries, and lemon zest and you got yourself a yummy chia pudding parfait! It’s the perfect healthy breakfast to meal prep ahead of time and is super easy to make. I love chia pudding because it packs in a lot of healthy fats, fiber, and protein to keep you fueled 🙌. This blackberry lemon chia pudding is naturally vegan, gluten-free, refined sugar free, and has the most yummy sweet and tart flavor! Recipe is below, so make sure to hit save! 💫

Ingredients:
1/4 cup chia seeds
1 cup canned coconut milk (well stirred)
1 lemon zested
2 Tbsp lemon juice
1 tsp vanilla extract
2 Tbsp pure maple syrup

blackberry jam:
heaping 1/2 cup blackberries
1 Tbsp water
1 Tbsp pure maple syrup
1 tsp chia seeds

In a bowl, add all the ingredients for the chia pudding. Whisk until well combined. Place in the fridge for an hour. Then whisk again to break up any clumps. Put back in the fridge for at least 4 hours or overnight.

When the chia pudding is done setting, make the blackberry jam. In a small pot, add the blackberries, water, and maple syrup. Stir and simmer, smashing the blackberries with the spatula as it cooks for about 5 min. Then add in the chia seeds. Stir until well combined and simmer for 2 min. Set aside.

Stir your chia pudding. Add a splash of any non-dairy milk if you want it thinner. Assemble your chia pudding by adding some of the blackberry jam to the bottom of a glass. Top with the lemon chia pudding. Then add some yogurt (I used coconut), fresh blackberries, and lemon zest on top. Enjoy!

Sick of all the food dyes in Easter candy at the store 🙋🏻‍♀️? Make these super easy chocolate peanut butter Easter eggs at home instead! I used blue spirulina to get that pretty robin’s egg blue, but you can make them whatever color you like using natural food dyes. These chocolate peanut butter eggs are really so easy to make and taste SO much better than store bought 🤤. They are also completely vegan and gluten-free too. Ingredients:
1 cup natural peanut butter
3 Tbsp coconut flour
1/4 cup pure maple syrup
1 1/2 cup white chocolate chips (vegan)
2 tsp coconut oil
1/8 tsp blue spirulina
2 drops natural red food dye (mine is from beets)
cacao powder for topping, optional

Add the peanut butter, coconut flour, and maple syrup into a bowl. Mix until combined. Set aside for 5-10 minutes to thicken up. Shape into eggs and place on a parchment lined plate or baking sheet. Freeze for 20 minutes. Melt white chocolate chips with coconut oil in 30 second increments until melted, stirring in between each increment. Divide into two bowls or small jars and add spirulina to one and the natural red dye to another. Stir until you get your desired colors. Dip each egg into the chocolate and place back onto the baking sheet. Freeze to set. Then lightly sprinkle cacao powder on top of the eggs. Enjoy! Store in the fridge or freezer.

Ingredients:
1 large ripe banana
1 3/4 cups rolled oats
1/4 cup @bethanyspantry probiotic vanilla protein powder (use code: nutsaboutgreens)
2 cups spinach
1 1/4 cup almond milk
1/2 tsp cinnamon
1/4 tsp salt
2 Tbsp ground flaxseed
1 Tbsp pure maple syrup
1 tsp vanilla extract
1 Tbsp baking powder

Add all ingredients into the blender except for the baking powder. Blend until smooth, but don’t over blend. Add the baking powder and blend for a few seconds until combined. Pour batter into a large mixing bowl (optional, but I find that it’s much easier to scoop out the batter onto the pan). Let the batter sit for 7-10 minutes. Don’t skip this step! Heat the griddle or pan to medium . Spray with some avocado oil and scoop about 1/3-1/2 cup of batter onto the pan. Cook for a few minutes until it starts to brown on the bottom and flip. Cook until golden on both sides. Enjoy with maple syrup!
