Still recovering from Halloween but also thinking about pie now? Let’s kick off pie month with these healthy apple pie stuffed sweet potatoes! It’s the perfect cozy fall breakfast that is nourishing, healthy, and easy to make, especially if you bake the sweet potatoes the day before. I love the warm cinnamon apples on top with some homemade granola for the yummiest crunch 🤌. The textures and flavors are amazing. These apple pie stuffed sweet potatoes would be great as a healthy dessert too! Recipe is below so make sure to hit save! 💫 RECIPE cinnamon apples: 1 large apple, diced 1-2 Tbsp water 1 Tbsp pure maple syrup 1/2 tsp cinnamon dash of nutmeg stuffed sweet potatoes: 2 sweet potatoes (I used Japanese sp) coconut yogurt cinnamon apples granola (I used my healthy applesauce granola from my blog) Preheat oven to 425 degrees F. Line a pan with parchment paper or foil. Poke a few holes into the sweet potatoes with a fork or knife. Bake for 45-60 minutes or until they are fork tender when pierced. This can be prepped the day before too! To make the cinnamon apples, place all the ingredients into a small pan. Sauté on medium heat for about 8 minutes, or until apples are softened. You can add more water if needed or maple syrup if you want it sweeter. To assemble, slice sweet potatoes in half lengthwise. Add a few spoonfuls of coconut yogurt in the middle, then top with cinnamon apples. They are soft, fluffy, moist, and full of pumpkin spice. The oreo cookies in the cake and on top take these pumpkin bars to the next level 🤤. This combo is so good and simply irresistible! You won’t be able to stop eating it and no one would know there are no eggs or dairy in it! It’s easy to make and would be great for Halloween too! Recipe is below so make sure to hit save! 💫 Ingredients: 1/4 cup coconut oil, melted 1/4 cup applesauce, room temperature 1/3 cup pure organic cane sugar 1/4 cup brown sugar (or coconut sugar) 1/2 cup pumpkin puree, room temperature 1 tsp vanilla extract 1 1/4 cup all-purpose flour 1 tsp cinnamon 1 tsp pumpkin pie spice 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 9 cookies and cream cookies or oreos, chopped (6 for the batter and 3 for the topping) Preheat oven to 350 degrees F. Grease an 8x8 square pan. In a medium bowl, add the flour, cinnamon, pumpkin spice, baking powder, baking soda, and salt. Whisk until combined. In a large bowl add the coconut oil, applesauce, sugar, brown sugar, pumpkin, and vanilla. Whisk until well combined. Add the dry ingredients to the wet ingredients. Mix with a spatula until just combined. Don’t overmix! Fold in the 6 chopped oreos. Place batter into the greased pan. It will be thick. Spread the batter evenly in the pan. Sprinkle the 3 chopped oreos evenly across the top. Bake for 16-18 minutes, or until a toothpick comes out clean. Let it cool completely on top of a cooling rack. Get these ingredients by going to the link in my bio PLUS get 15% off your next Vitacost order with code GREENS15 now through October 30th! 💫 Ingredients: 2 cups oat milk 1 Tbsp pure maple syrup 1/4 cup unsweetened applesauce 1/4 tsp ceylon cinnamon 2 Cinnamon Apple Spice tea bags topping: 1/4-1/2 cup oat milk frothed ceylon cinnamon 1 cinnamon stick (optional) In a small pot over medium low heat, add the oat milk, pure maple syrup, applesauce, and cinnamon. Whisk until well combined. Bring to a light boil. Then turn off the heat and add the 2 tea bags. Steep tea for 6 minutes. Remove tea bags and pour latte into a mug. Add frothed oat milk on top, a dash of cinnamon, and a cinnamon stick. Enjoy warm!
