Chocolate Peanut Butter Easter Eggs 🐣🍫

Sick of all the food dyes in Easter candy at the store 🙋🏻‍♀️? Make these super easy chocolate peanut butter Easter eggs at home instead! I used blue spirulina to get that pretty robin’s egg blue, but you can make them whatever color you like using natural food dyes. These chocolate peanut butter eggs are really so easy to make and taste SO much better than store bought 🤤. They are also completely vegan and gluten-free too. Recipe is below so make sure to hit save! 💫

Ingredients:
1 cup natural peanut butter
3 Tbsp coconut flour
1/4 cup pure maple syrup
1 1/2 cup white chocolate chips (vegan)
2 tsp coconut oil
1/8 tsp blue spirulina
2 drops natural red food dye (mine is from beets)
cacao powder for topping, optional

Add the peanut butter, coconut flour, and maple syrup into a bowl. Mix until combined. Set aside for 5-10 minutes to thicken up. Shape into eggs and place on a parchment lined plate or baking sheet. Freeze for 20 minutes. Melt white chocolate chips with coconut oil in 30 second increments until melted, stirring in between each increment. Divide into two bowls or small jars and add spirulina to one and the natural red dye to another. Stir until you get your desired colors. Dip each egg into the chocolate and place back onto the baking sheet. Freeze to set. Then lightly sprinkle cacao powder on top of the eggs. Enjoy! Store in the fridge or freezer.

These spinach banana oat protein pancakes are perfect for St. Patrick’s Day or any day you’re craving some pancakes! It’s packed with veggies, protein, and fiber to keep you feeling full. They are kid approved and a great way to sneak in some veggies for breakfast 😏. They’re so easy to make in your blender and super nourishing too 👊. Pancakes are always a good idea for your weekend brunch or breakfast. Recipe is below so make sure to hit save! 💫

Ingredients:
1 large ripe banana
1 3/4 cups rolled oats
1/4 cup @bethanyspantry probiotic vanilla protein powder (use code: nutsaboutgreens)
2 cups spinach
1 1/4 cup almond milk
1/2 tsp cinnamon
1/4 tsp salt
2 Tbsp ground flaxseed
1 Tbsp pure maple syrup
1 tsp vanilla extract
1 Tbsp baking powder

Add all ingredients into the blender except for the baking powder. Blend until smooth, but don’t over blend. Add the baking powder and blend for a few seconds until combined. Pour batter into a large mixing bowl (optional, but I find that it’s much easier to scoop out the batter onto the pan). Let the batter sit for 7-10 minutes. Don’t skip this step! Heat the griddle or pan to medium . Spray with some avocado oil and scoop about 1/3-1/2 cup of batter onto the pan. Cook for a few minutes until it starts to brown on the bottom and flip. Cook until golden on both sides. Enjoy with maple syrup!

This high protein creamy pesto pasta is super easy to make and so comforting. The sauce comes together in just a few minutes while the pasta is cooking (especially if you use store bought pesto). It is perfect for those busy nights when you want to feed your family a quick and healthy meal. The silken tofu makes it so creamy and high in protein, but I promise you can’t taste it! Make it for St. Patrick’s Day for a fun green dinner without the food dyes 🙌. Recipe is below, so make sure to hit save! 💫

Ingredients:
1 lb pasta (use gluten-free if needed)
16 oz silken tofu
3/4 cup vegan pesto (about 180 g)
scant 1/2 tsp sea salt
2 Tbsp nutritional yeast
1 large handful of spinach
1/2 cup vegan parmesan, plus more for topping

Cook your pasta according to package’s directions. While the pasta is cooking, add the rest of the ingredients except the vegan parmesan to a blender. Blend until smooth. The sauce will taste really salty at first, but once you add it to the pasta, it will balance out. Taste and adjust seasonings if needed. Top with extra parmesan when serving. Enjoy!

Unlike the Americanized version that has added butter, sugar, and dried fruit, this traditional Irish soda bread only has four simple ingredients: flour, salt, baking soda, and buttermilk (I made a vegan one). Ingredients:
1 cup medjool dates, pitted
1/3 cup water
1/2 cup almond butter (or any nut/seed butter)
1 tsp vanilla extract
1/3 cup cacao powder
1/4 cup almond flour
1/2 tsp baking powder
1/8 tsp sea salt extract

Preheat the oven to 350 degrees F. Add the dates, water, almond butter, and vanilla to a food processor. Blend until smooth. Then add the cacao powder, almond flour, salt, and baking powder. Blend until smooth. Scoop batter into a mini muffin pan (greased or use a silicone pan). Bake for 13-15 minutes. Enjoy!

Overnight Oats:
1/2 cup rolled oats
1 Tbsp chia seeds
2 Tbsp @bethanyspantry probiotic cacao protein powder (use code: nutsaboutgreens to save $$)
3/4 cup almond milk (or any non-dairy milk)
1/2 cup chopped strawberries
1 Tbsp pure maple syrup, or to taste
2 Tbsp coconut yogurt (I like @harmlessharvest)
1 Tbsp cashew butter (or any nut butter)

Chocolate Shell:
2 Tbsp dairy-free chocolate (I used @hukitchen)
1 tsp coconut oil

Add all the overnight oats ingredients in a glass tupperware. Stir until well combined. Cover and place in the fridge for at least 4 hours or overnight. When ready to eat, melt chocolate and coconut oil in the microwave in 30 second increments, stirring after each increment until smooth. Drizzle over the overnight oats and place in the fridge for 15 minutes. Sprinkle with flaky sea salt if desired and enjoy!
