Pumpkin Spice Protein Muddy Buddies (vegan, gluten Pumpkin Spice Protein Muddy Buddies (vegan, gluten-free) ✨ I love making protein muddy buddies to snack on and this pumpkin spice version is perfect for fall. They are high in protein, not overly sweet, and so addicting 🤤. My favorite way to eat it is like cereal with some almond milk. It’s super simple and easy to make too. Make a big batch and snack on it while you are prepping Thanksgiving dinner ☺️. Recipe is below so make sure to hit save! 💫 Ingredients: 1/4 cup cashew butter 1/4 cup dairy-free white chocolate chips 2 tsp extra virgin olive oil 3 1/2 cups @chexcereal rice Chex cereal 1 heaping tsp pumpkin spice 2-3 scoops @nuzest probiotic vanilla protein powder (use code: NUTSABOUTGREENS to save $$) In a big glass bowl, add the cashew butter and white chocolate chips. Microwave in 30 second increments, stirring after each until melted. Add the olive oil after the second increment to help smooth the mixture out. Careful not to burn your chocolate. Pour in the Chex cereal and stir with a spatula until everything is evenly coated. Sprinkle pumpkin spice over the cereal and mix. Add the protein powder and stir again until evenly coated. Enjoy! Store in an airtight container in the fridge or freezer. Still recovering from Halloween but also thinking about pie now? Let’s kick off pie month with these healthy apple pie stuffed sweet potatoes! It’s the perfect cozy fall breakfast that is nourishing, healthy, and easy to make, especially if you bake the sweet potatoes the day before. I love the warm cinnamon apples on top with some homemade granola for the yummiest crunch 🤌. The textures and flavors are amazing. These apple pie stuffed sweet potatoes would be great as a healthy dessert too! Recipe is below so make sure to hit save! 💫 RECIPE cinnamon apples: 1 large apple, diced 1-2 Tbsp water 1 Tbsp pure maple syrup 1/2 tsp cinnamon dash of nutmeg stuffed sweet potatoes: 2 sweet potatoes (I used Japanese sp) coconut yogurt cinnamon apples granola (I used my healthy applesauce granola from my blog) Preheat oven to 425 degrees F. Line a pan with parchment paper or foil. Poke a few holes into the sweet potatoes with a fork or knife. Bake for 45-60 minutes or until they are fork tender when pierced. This can be prepped the day before too! To make the cinnamon apples, place all the ingredients into a small pan. Sauté on medium heat for about 8 minutes, or until apples are softened. You can add more water if needed or maple syrup if you want it sweeter. To assemble, slice sweet potatoes in half lengthwise. Add a few spoonfuls of coconut yogurt in the middle, then top with cinnamon apples. Vegan Cookies and Cream Pumpkin Bars ✨ These co Vegan Cookies and Cream Pumpkin Bars ✨ These cookies and cream pumpkin bars are so delicious and the perfect fall treat. They are soft, fluffy, moist, and full of pumpkin spice. The oreo cookies in the cake and on top take these pumpkin bars to the next level 🤤. This combo is so good and simply irresistible! You won’t be able to stop eating it and no one would know there are no eggs or dairy in it! It’s easy to make and would be great for Halloween too! Recipe is below so make sure to hit save! 💫 Ingredients: 1/4 cup coconut oil, melted 1/4 cup applesauce, room temperature 1/3 cup pure organic cane sugar 1/4 cup brown sugar (or coconut sugar) 1/2 cup pumpkin puree, room temperature 1 tsp vanilla extract 1 1/4 cup all-purpose flour 1 tsp cinnamon 1 tsp pumpkin pie spice 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 9 cookies and cream cookies or oreos, chopped (6 for the batter and 3 for the topping) Preheat oven to 350 degrees F. Grease an 8x8 square pan. In a medium bowl, add the flour, cinnamon, pumpkin spice, baking powder, baking soda, and salt. Whisk until combined. In a large bowl add the coconut oil, applesauce, sugar, brown sugar, pumpkin, and vanilla. Whisk until well combined. Add the dry ingredients to the wet ingredients. Mix with a spatula until just combined. Don’t overmix! Fold in the 6 chopped oreos. Place batter into the greased pan. It will be thick. Spread the batter evenly in the pan. Sprinkle the 3 chopped oreos evenly across the top. Bake for 16-18 minutes, or until a toothpick comes out clean. Let it cool completely on top of a cooling rack.
