Chinese Scallion Oil Noodles (vegan)

This classic Chinese scallion oil noodles are simple yet so delicious. They are a staple in most Chinese households and only take a few ingredients to make. The noodles are coated in a soy scallion oil and topped with fried scallions.

Ingredients

  • 8 stalks scallions
  • 1/4 cup avocado oil (or any neutral oil)
  • 3 Tbsp soy sauce
  • 3 Tbsp dark soy sauce
  • 2 tsp pure organic cane sugar
  • 12 oz dried thin Chinese wheat noodles
  • sesame seeds, optional for topping

Instructions

  • Cut the roots off of the scallions and discard. Cut scallions into 2 inch long pieces and julienne the white parts into thin strips. 
  • Cook noodles according to package’s instructions. Drain and rinse well. 
  • In a large wok over medium heat, add the avocado oil. Once oil is hot, add the white parts of the scallions. Stir and cook for 2 minutes. Then add the green parts of the scallions and saute for another 2-3 minutes, until they are golden. Remove scallions from oil and set aside. 
  • Turn heat to low. Add the soy sauce, dark soy sauce, and sugar to the hot oil. Stir and bring to a simmer for 1-2  minutes. Turn heat off and add noodles. Toss in the sauce until everything is evenly coated. Portion noodles out and top with the fried scallions and sesame seeds. Enjoy! .
