Preheat oven to 350 degrees F. Line a baking sheet with parchment or use a silicon mat.
In a large bowl, add the coconut, pumpkin/sunflower seeds, hemp hearts, chia seeds, and salt. Mix with a spatula until well combined. Add the maple syrup and mix until everything is evenly coated and combined.
Place about a 1-1.5 tablespoon sized clusters on the lined baking pan. Bake for 13-16 minutes, or until coconut flakes turn a nice golden brown. Let it cool on the pan for at least 45 minutes. The clusters will spread in the oven a bit so when they come out of the oven, take a spatula and push the sides into the center of the clusters to shape them. When they cool, they will harden into the clusters. Remove carefully once cooled. Enjoy! Store extras in an airtight container on the counter.
