Coconut Crack Clusters (vegan, gluten-free, paleo, oil-free)

Have you ever had/sampled those coconut clusters from Costco or Sam's Club?! They are so dang addicting and when I looked at the ingredients, they are actually quite simple. I knew I could easily recreate this snack at home and man, they are good!

Coconut Crack Clusters (vegan, gluten-free, paleo, oil-free)

Ingredients

  • 1 1/2 cup coconut flakes
  • 3/4 cup raw pumpkin seeds and/or sunflower seeds (I did half pumpkin half sunflower)
  • 2 tbsp hemp hearts/seeds
  • 2 tbsp chia seeds
  • scant 1/4 tsp sea salt
  • 1/3 cup pure maple syrup

Instructions

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment or use a silicon mat.
  • In a large bowl, add the coconut, pumpkin/sunflower seeds, hemp hearts, chia seeds, and salt. Mix with a spatula until well combined. Add the maple syrup and mix until everything is evenly coated and combined.
  • Place about a 1-1.5 tablespoon sized clusters on the lined baking pan. Bake for 13-16 minutes, or until coconut flakes turn a nice golden brown. Let it cool on the pan for at least 45 minutes. The clusters will spread in the oven a bit so when they come out of the oven, take a spatula and push the sides into the center of the clusters to shape them. When they cool, they will harden into the clusters. Remove carefully once cooled. Enjoy! Store extras in an airtight container on the counter.
