First make the dressing. In a small bowl, whisk together all the ingredients until well combined. Taste to see if you would prefer it to be a little sweeter or more sour. Add more maple syrup for sweeter or lemon for more sour.
Assemble the salad. Add your desired amount of spring mix, apples, pecans, and dried cranberries. Drizzle the dressing on top. Mix and enjoy!
