Sometimes I just crave a good old oatmeal chocolate chip cookie. I love this recipe because it's incredibly easy to whip up and takes only ONE bowl. Woot woot! Less dishes is always a plus.
1flax egg (combine 1 Tbsp ground flax + 3 Tbsp water, set aside for 5 min)
1/4cupcoconut oil, melted
1/2cupcoconut sugar (you can sub brown sugar if you want)
1tspvanilla extract
1cupoat flour
1cuprolled/old fashioned oats
1/2tspbaking soda
1/4tspsalt
1/2tspcinnamon
1/3-1/2 cupchocolate chips or chunks
flaked sea salt or kosher salt to sprinkle on top
Instructions
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silpat mat.
In a large bowl, use a spatula and mix flax egg, melted coconut oil, coconut sugar, and vanilla extract until well combined. Stir in the oat flour, oats, salt, baking soda, and cinnamon until well combined. Fold in chocolate chips/chunks.
Place in the fridge for 15 minutes.
Use a medium cookie scoop to place cookies on baking sheet, about 1 1/2 Tbsp of cookie dough. Flatten with your hands and bake for 9-11 minutes. Don’t overbake! It will firm up more when it cools. Sprinkle some flaked sea salt/kosher salt on top. Let it cool on the pan for 15 minutes, then remove and place on a cooling rack.
