6heaping cups Chex cereal (you can use rice or corn chex or both)
2cupspretzels
1 1/2cupssesame sticks (I get mine at Trader Joe’s, Sprouts, or Whole Foods)
1cupnuts (peanuts, cashews, walnuts, or almonds)
1/4cupvegan butter, melted
1/3cuppure maple syrup
1Tbsplow-sodium soy sauce
1/4tspsalt
1/3cupvegan furikake(see post for which one I use)
Instructions
Preheat oven to 250 degrees F. Line a baking sheet with a silicone mat or parchment paper.
In a very large bowl, add the Chex, pretzels, sesame sticks, and nuts. Stir with a spatula until well combined.
In a small bowl, add the melted butter, maple syrup, soy sauce, and salt. Stir until well combined. Pour over Chex mixture. Stir with a spatula until everything is evenly coated. Then sprinkle the furikake over the mixture. Stir until well combined.
Spread chex mix over the lined pan. Bake for 70-75 minutes, stirring every 15 minutes. Let it cool on the pan completely. It will crisp up more as it cools. Enjoy! Store in an airtight container.
