Healthy Cashew Butter Cookie Dough Bites (vegan, gluten-free, oil-free)

These healthy cashew butter cookie dough bites make for the perfect treat when you are craving something sweet. They are easy to make and only take one bowl!

Ingredients

  • 1/2 cup almond flour
  • 1/2 cup oat flour
  • 1/2 cup cashew butter (I love Georgia Grinders)
  • 3 Tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1-2 tsp almond milk (start with 1 tsp)
  • 1/8 tsp salt
  • 1/3 cup mini chocolate chips

Instructions

  • Add all the ingredients except chocolate chips into a mixing bowl. Mix with a spatula until well combined. If it seems too dry, add 1 tsp more of almond milk. It will be a thick dough. 
  • Fold in chocolate chips. Roll into balls and place in the fridge for 30 minutes. Enjoy! Store in an airtight container in the fridge or freezer.
