Healthy Chocolate Protein Rice Crispy Treats (vegan, gluten-free, oil-free)

These healthy chocolate protein rice crispy treats are a childhood classic made with wholesome ingredients. It is so tasty and easy to make.

Ingredients

  • 3 cups rice crispy cereal
  • 1/4 cup cacao powder (or cocoa powder)
  • 1/4 cup Nuzest probiotic cacao protein powder (use code NUTSABOUTGREENS to save $$)
  • 1/2 tsp sea salt
  • 3/4 cup cashew butter
  • 1/2 cup pure maple syrup
  • Sprinkles for topping, optional

Instructions

  • Line an 8×8 square pan with parchment paper. Set aside.
  • In a large bowl, add the rice crispy cereal, cacao powder, chocolate protein powder, and salt. Stir until well combined.
  • In a microwave safe bowl, add the cashew butter and maple syrup. Stir and microwave for 30 seconds to melt together. Stir again until combined.
  • Pour liquid mixture into the bowl with the rice crispy. Stir with a spatula until everything is well combined and evenly coated. Transfer mixture to the lined pan, spread it out evenly, and press down firmly so it is nicely packed in. Place in the freezer for 1 hour. Once chilled, slice and serve! Keep leftovers in the fridge or freezer.
