Lemon Coconut Energy Bites (vegan, gluten-free, oil-free)
These lemon coconut energy bites are the perfect Spring snack. It is filled with good for you fats, fiber, and protein to keep you fueled!

Ingredients

rolled oats

ground flaxseed
1/4
cup
finely shredded coconut (unsweetened)

tbsp
pure maple syrup

lemon zested and juiced
1/3
cup
cashew butter
1/8
tsp
sea salt
1/2
tsp
vanilla extract
Instructions
Add all ingredients to a food processor and blend until combined. Roll into balls (I used my 1.5 Tbsp cookie scoop). I got about 12 balls. Store in an airtight container in the fridge or freezer. Enjoy!
