Lemon Coconut Energy Bites (vegan, gluten-free, oil-free)

These lemon coconut energy bites are the perfect Spring snack. It is filled with good for you fats, fiber, and protein to keep you fueled!

Lemon Coconut Energy Bites (vegan, gluten-free, oil-free)

Ingredients

  • 1 1/4 cup rolled oats
  • 3 tbsp ground flaxseed
  • 1/4 cup finely shredded coconut (unsweetened)
  • 3 tbsp pure maple syrup
  • 1 big lemon zested and juiced
  • 1/3 cup cashew butter
  • 1/8 tsp sea salt
  • 1/2 tsp vanilla extract

Instructions

  • Add all ingredients to a food processor and blend until combined. Roll into balls (I used my 1.5 Tbsp cookie scoop). I got about 12 balls. Store in an airtight container in the fridge or freezer. Enjoy!
