Mom’s Pine Nut Tofu (vegan, gluten-free)

This is my mom's pine nut tofu dish that is so comforting, easy, and delicious. It comes together super fast for those quick weeknight meals.

Ingredients

  • 1 box (16 oz) soft tofu, diced into 1 inch cubes
  • 1 Tbsp avocado oil (or any oil)
  • 2 cloves garlic, minced
  • 2 Tbsp soy sauce
  • 1 Tbsp vegetarian oyster sauce (also called mushroom stir fry sauce)
  • 1 tsp pure organic cane sugar
  • 1 tsp sesame oil
  • 1/2 tsp mushroom seasoning powder
  • 1 tsp cornstarch
  • 2 Tbsp water
  • green onion, sliced for garnish
  • 3-4 Tbsp pine nuts, toasted

Instructions

  • Make the sauce in a small bowl by adding the soy sauce, vegetarian oyster sauce, sugar, sesame oil, mushroom seasoning powder, cornstarch, and water. Stir until combined.
  • In a large skillet on medium high heat, add the avocado oil. Add the garlic and saute for 30 seconds. Then add the tofu and gently saute for 2-3 minutes. Add the sauce and stir gently. Cook for 2 more minutes until sauce thickens.
  • Remove from heat and add green onions, pepper, and sprinkle toasted pine nuts on top. Serve with white or brown rice. Enjoy!
