Overnight Slow Cooker Banana Steel Cut Oats

Iam a big fan of easy breakfasts and what can be better than waking up to the smell of banana and cinnamon? These overnight slow cooker banana steel cut oats are so easy to whip up the night before. In just one pot, the oats cook while you are sleeping and you wake up to a delicious, warm, satisfying, and filling breakfast.

Overnight Slow Cooker Banana Steel Cut Oats

Ingredients

  • 1 1/2 cups steel cut oats
  • 4 cups water
  • 2 cups unsweetened almond milk, or any kind you like
  • 2 large mashed ripe bananas, plus additional banana slices for serving
  • 3 tbsp ground flaxseed meal (you can also use chia seeds or hemp seeds)
  • 2 tsp pure vanilla extract
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp sea salt

For serving:

  • chopped nuts, raisins, chocolate chips, maple syrup, peanut butter, or any other mix-ins you enjoy with oats

Instructions

  • Place all of the ingredients except the toppings in the bottom of a 4-to-6-quart slow cooker and stir to combine. Cover and cook on low for 7-8 hours (overnight) or on high for 4 hours, until the oats are soft but maintain a bit of chew. Remove cover and stir to evenly combine the ingredients. Enjoy warm with desired toppings.
